Hi scarlett, it was lovely a little runny so you might want to boil it for 35 mins i only boiled it for about 25 mins. serves 6
2 onions sliced
12 boneless chicken thighs and no skin
2 garlics cloves crushed
1 tbsp smoked paprika- can use normal too
400g chopped toms
400ml chicken stock
2 bayleaves
1 tsp dried herbs
3 large peppers- i used mixed
1 tbsp corn flour - 3.5 syns
1 tbsp water
cook the onions till theyre soft on a medium heat for 6- 8 mins
cut the chicken thighs in half
put the chicken in with the onions and cook for 4-5 mins
stir in the paprika and garlic and cook for 1 min
add the tomato and stock and bay leaf and the herbs. bring to a simmer and leave for 20 mins, stir every now and then.
cut up the peppers into thichish pieces. add these to the pan and cook for 25-35 mins stirring now and again
then mix corn flour in with the water. tip this into the pan and stir until it thickens.
i served it with rice, really lovely
