Wanted to share this as I find them great for snacking on
Mini quiches - totally free and yummy!
Mix half a tub of quark with two eggs in a bowl
Set aside
Fry off (in frilight) any veg you want inside your quiche - mushroom onions tomatoes etc etc - anything!
Use a slice or not al shop brought ham and lay it inside a muffin or cupcake tin (this makes the base for your quiche instead of pastry)
Mix your fried stuff in with the egg and quark mixture
Fill ham cases and put in oven at 180 for about 20mins or until set
(add some cheese on top and out back in to melt if desired)
They last a few days in the fridge but I usually end up eating loads fresh from the oven lol
Have with a side salad to make up part of your 3rd free food on an EE day
