My personal targets for this week:


1. Drink more water.
2. Experiment in the kitchen with a new SW friendly recipe.
3. To not lick the bowl (or any piece of equipment!!) when baking chocolate cupcakes for my friends birthday on Monday.

So I just wanted to do a little update on my targets:

Firstly, I pinky promise - there was NO licking action to any bowls, spoons or other piece of baking equipment ;)

Secondly, I'm still working on number 1 and number 2 is currently in action.... I have a little baking recipe up my sleeve, which i'm going to experiment with tomorrow - so watch this space ;) lol xx

The cupcakes look wonderful :) And I'll be interested to see your baking experiment :) Good luck with the water intake. I can drink pints & pints if I have some no sugar squash in it, but get fed up with just plain water.

Aww thanks Kelly:). I had to drop them off early, too much temptation having them sat in my kitchen;) I'm just about to upload the pics.. I don't usually have much luck with SW baking recipes but these turned out great! That's the same as me hun - I have to add some Robinson's sugar-free to give it a bit of flavour! xx
 
If you know me you'll know that my biggest weakness is scones. I absolutely LOVE them, but unfortunately there very high in syns. I've tried a few of the SW scones recipes e.g yoghurt scones but they've never worked out very well for me and as a fussy scones-critic;)...my search continued for a SW friendly "real" scone!

After a bit of experimenting in the kitchen this afternoon, I've put this recipe together -
They were so soft and delicious, my mum didn't even notice they were a lighter version! I'll definitely be using this recipe again when I need my scones fix!

"Real" Afternoon Tea Scones


Syns:
6 average sized scones - 7 syns each
or 12 mini scones - 3.5 syns each

Ingredients:
170g/6 oz self raising flour
28g/1oz utterly butterly spread
125ml semi-skimmed milk
28g sultana's
1 tsp vanilla essence
Pinch of salt
Sweetener to taste

Method:
- Pre-heat oven to 230 degrees/gas mark 8.
- Sift the flour, salt and sweetener into a mixing bowl (hold back a little flour for dusting the work surface to roll the dough).
- Add the margarine and using your fingertips, rub the margarine into the flour until it resembles breadcrumbs.
- Add the sultana's, 3/4 of the milk and the vanilla essence, mixing softly with a knife until you form a dough.
- Transfer the dough from the mixing bowl onto a floured surface.
- Lightly knead the dough until soft, then using your hands gently pat down the dough to a 1" thickness.

- Using a pastry cutter, cut out 6 scones (making sure not to twist the pastry cutter - as this will prevent the scones from rising).
- Place the scones onto a baking tray lightly sprayed with frylight.
- Brush the scones with the leftover milk then place them in the oven and bake for 10-12 minutes, until risen and golden.

- Enjoy warm or if you prefer them cold, cover the scones with a tea towel whilst cooling - this keeps them lovely and soft. Store in an air-tight container.


Syns breakdown:
6oz self raising flour (27 syns)
1oz utterly butterly spread (7.5 syns)
125ml semi-skimmed milk (3 syns)
28g sultana's (4 syns)
Total = 41.5 syns, divided by 6 = 6.91 - round up to 7 syns

SW scone(7),1tsp butter(1) and 1tsp jam(1)
Total= 9.5 syns

2 Weetabix (HxB), Skimmed milk (HxA)
Chopped banana

Mullerlight toffee

Frothy coffee (using milk from HxA)

Garlic chicken tarragon casserole:
onions, garlic, celery, tarragon,
carrots, potatoes, chicken breast(HxB)
Total = 0 syns
 
Yesterday's food diary here, it's a late one but I had a very busy day yesterday, my Goddaughters 3rd birthday... buttercream swirled cupcake temptation everywhere! But I resisted… I don't know how many syns there are in cupcakes, and to be honest.. I don't think I want to know!;)

Friday 31st Aug (Green day)

35g Porridge Oats(HxB), made with water
Skimmed milk(HxA), frozen berries

Strawberries and grapes
Frothy coffee (using milk from HxA)

Chicken stir-fry: stir-fry veg, rice noodles
chicken breast (HxB), Chinese stir-fry sauce(5)

Total = 7 syns

Warbutons toasted teacake(6),1tsp butter(1)

SW chicken tikka masala:
Chicken breast(HxB)
Onions, garlic, red chilli, chopped toms,
tomate purée, Yeo Valley 0% natural yogurt,
fromage frais, tikka curry powder, ground ginger
Served with boiled rice and a couple of Mccain 5%
crinkle oven-chips(1)
Total = 8 syns
 
And you can't stop at just one;)...


It's funny you said that actually - I had some of my old Original/Green day recipe book's out last night trying to plan meals for this week (getting bored of the same meals) and there's quite a few green recipes i'd love to try. I have so many cut-outs from the SW mags... I need to put together a recipe folder!! :) xx
 
I've been thinking the same thing hun and to be honest, that was one of the main reasons I wanted to introduce red/green days, so that I could have another HxB. I think it's just by habit that i'll add chicken to my stir fry's and curries... but I really enjoy my veggies, so I could quite easily omit the meat (I've also never tried quorn)... Well that' definitely given me food for thought:rolleyes:. xx
 
I'll have to have a look when I go shopping this week, especially as I see most of there products are syn free!:D xx

Pork loin, SW roast potatoes, carrots,
broccoli, pea's and gravy(2 syns)

Vanilla custard slice, 12.5 syns
Total = 14.5 syns

My mum treated us both to a Vanilla custard slice, naughty but so worth it!;) (I'm actually quite surprised i'm within my daily syns).

Me too :D …custard slices have to be my absolute favourite! I've never tried caramel custard donuts, I do love the apple ones though, mmmm;) *think healthy thoughts, think healthy thoughts* haha! I found a thread which had the Asda chilled section cakes syns (big mistake!!! lol)… but quite a few of them are under 15 syns, so I thought they'd make a nice occasional treat if your having a syn-free dinner.

With my SW "Real" Afternoon Tea Scones turning out so well, I've been on a bit of a baking roll;)…. I really wanted to try my hand at fruit flapjacks, i'm not really one for flapjacks, but my family love them. I think if I was to make them again, I wouldn't spray the baking tin with any frylight (so i've left this out of the recipe) as they slightly burnt around the edges of the tin, but other than that they turned out quite well :)

Cherry Flapjacks


Syns:
9 average sized flapjacks - 7 syns each
or 18 mini flapjacks - 3.5 syns each

Ingredients:
6oz/170g porridge oats
4oz/112g flora light
2oz/56g glacé cherries
2 tbsp honey
4 tbsp sweetener
2 tsp ground nutmeg
2 tsp ground ginger

Method:
- Pre-heat oven to 180 degrees/gas mark 4 and line a swiss roll baking tin with baking paper.
- Place the spread, honey, sweetener, ground nutmeg and ground ginger into a large pan over a medium heat. Keep stirring the mixture until it reduces to a liquid and starts to bubble.
- Add the oats and cherries to the pan and continue to stir until all of the oats are coated, then remove the pan from the heat.
- Empty the mixture into the baking tin, making sure it is spread out evenly.
- Place the baking tin onto the middle shelf of the oven and bake for approximately 30-35 minutes, until lightly golden.
- Once cooked, cut the flapjack into 18 or 9 portions whilst it is still warm.
- Allow the flapjacks to completely cool, then remove them from the baking tin. Store in an air-tight container.


Syns breakdown:

2oz/56g glacé cherries (7 syns)
2 tbsp honey (6 syns)
Total = 63 syns, divided by 18 = 3.5 syns
63 syns, divided by 9 = 7 syns
