Just heard from Di - she has been madly busy on a million things, as per usual, and has had awful early starts, poor love - but hopes to be back on the forum this week xxx
 
Bounds back in ... trying to look all fresh faced and full of beans ... but the truth is, I've been pulled from every which way by the difficult people I have to work with in the various companies - and I have been feeling shredded and exhausted ... and then I've fallen off the sodding wagon - several times - although still pick myself up and have done again today... SO SO SO SO sorry everyone for my lack of attendance and my lack of support to all you lovely yummy friends...

Made a load of low carb soup yesterday which should help to see me through the week:

celery, spring onions, spring greens, watercress, chicken thighs, bit of bacon, handful of grated cheese, 2 eggs and some mayo... seasoned with bay leaves, star anise, juniper berries, splash of red wine vinegar and low carb stock cubes. Blitzed all together with that brilliant gadget and now have bagged them and they are in the freezer.

B - 2 poached eggs, 2 rashers of bacon, unsweetened soya latte... heaven! I've got a stack of contracts, agreements etc to wade through today - but, I'm currently in a cafe in Soho and enjoying the morning.

Love you guys! I need to get that focus back - SO BADLY - but, at least I've started well today... one baby step at a time! xxx

Soup sounds lovely. Think I'll do some courgette soup this week - it's certainly the weather for it, eh?
