Becky's Diary : This time next year.........................

Wow Becky! You are my inspiration. And is that finally you in the avatar? Just plain gorgeous!! Just when I feel I've had it with dukan and need a break, I read your diary and it makes me want to keep going. So much positive energy flowing out of you at the moment, I wish you could bottle it and send it on over!

Keep up the great work on shred! and I am going to go back through your diary and make a recipe book myself this week.

Cx

how do you make the amaretto cheesecake Becky? :) x

Hey Lotto, here's what I did, my own version! :) I miss the real thing, i make the loveliest baked amaretto cheesecake I say! :D

I used 200g extra light philly, 4tbsp 0% total (next time I will probably add some skimmed milk to get the consistency of cream, I think it will make it even more moist and bigger!), 4tbsp splenda (like it sweet), 1 egg, 2tbsp amaretto liquor ( I know but I baked it so alcohol evaporates and I cut into 6 portions!). Blend with electric beater until smooth. I put mine into a small springform round baking tin (the one with the clip at the side). Baked in oven at 190C for 5 mins then reduce to 110C for a further 45mins. Leave to cool in oven for an hour then refridgerate overnight.
6 portions, remember there is philly which is tolerated 1 portion has 33.3g of philly. You will enjoy it! :)

Kikiki people did you hear that; I am a fountain of knowledge! :) Debs I love you! I shall try to live up to that.

You don't need much space with shred, there is no running about, the only move that take space is the jumping jacks and the push ups so I say if you can lie down with your arms and legs stretched out you should be fine. The good news is there is Anita doing the modified (easier version) which is always helpful.

Hey I see you missed target 4, that was quite an ambitious goal, 5lbs! :D

Cheesecake sounds amazing. How long does it last in the fridge. There would only be me eating it, I assume it can't be frozen. I'd probably have two pieces at a time so would it keep for three days.

Not got any ameretto (sp?) but presume its as nice with brandy LOL......oooo tia maria maybe hmmmm

Not sure how long it lasts, there is 3 of us so mine lasted 2 days only!:( You could try freezing it, you can buy frozen cheesecake! Tia maria might work as nice, let me know!:)
1/6 portion will equal 1 tolerate of your daily 2 so I suppose you can have 2 portions and no other tolerates if you like.

Becky your menus are amazing, meatzza I'm intrigued...

Thanks Sid, found recipe in the recipe thread I think. It was yummy. Made a burger mixture and spread onto a flat pan (used base of my large springform pan) baked 10 mins. Fried bacon medallions, mushrooms, andpeppers for topping. Spread tinned tomatoes on base, topping then under the grill to brown!
