Cooking for one

I live on my own and cook from basics (no takeaways or Ready meals) but sometimes I cook a bigger portion that I need to and end up eating it (since starting SW I try to cook smaller portions and freeze leftovers). I wonder if anyone else cook for one and how they cope and what sort of food you eat.
 
I cook too much deliberately then have it for lunch next day. I also batch cook and freeze meals. I split multipacks of chicken and things and freeze in individual bags. I make soups, curries, bags of bolognese sauce with extra lean mince...also make lasagne and freeze in small portions
 
Ally I do batch cooking too for soups and stews and curries but when I cook fresh things like rice and pasta, flan(things that taste good freshly cooked), I eat more than I should.
 
I try to cook the same for my OH.... however, I also cook a lot of stuff just for me.....Last night I did a Thai beef salad, took the leftovers to work for lunch.... was delish. On a Monday I have lunch & dinner at work.... I make a big batch of veggie chilli and have this for both meals and fruit all day (good for WI on a tuesday). I tend to follow the red plan, so not too many bakes/quiches. As long as you have your 3rd superfree it should work... if you have to have a bowl of salad before it, this may put you off eating xx
 
I had the same problem cooking too much rice and pasta. If I make too much pasta I let it go cold and mix with tuna, sweetcorn and extra light mayo for lunch next day. Extra rice I use next day and fry up with egg, soy sauce and veg stirred through. Getting a bit better judging quantities though since I starting using smaller pot to cook.
 
Same here. Still learning to judge the portions,usually they're too big and i have them next day for lunch :) But i'm getting there :) I don't freeze anything yet,apart from meat and vegetables of course,but no prepared meals yet. Maybe i should?
 
I dont cook for one but I do always cook more than I need as most recipes are for 4, 6 or 8. I just box up the leftovers and freeze them or store them in the fridge for lunch next day. Im currently having to raid the freezer as its bursting owing to this :D Rice, pasta and veg I always leave in the fridge and have for lunch next day mixed with some sauce or veg or whatever.
