Still maintaining my weight even though I am eating more and more carbs too. Just sticking to 3 healthy meals a day and trying not to nibble in between.
I think what works for me is my shifts. I work 4 x 12 hour shifts and I am always really good on these, then on my 4 days off, thats when I snack/nibble a little more, so it seems to balance itself out.
Typical meals I have been having are
Breakfasts, 1 of the following.
Porridge followed by boiled egg and ryvita.
Continental breakfasts, tomato, cucumber, cheese, olives, boiled egg, wholemeal bread.
Grilled bacon with poached egg, tinned or fresh tomatoes, wholemeal toast.
Lunches
Usually home made soup with meat/chicken, full of lentils, barley etc.
Wholemeal sandwiches with meat and salad.
Dinners,
Just normal dinners now.
Pork chop, potatoes, veg.
Steak, fat free chips, salad.
Gammon, potatoes, veg, parsley sauce.
Really got respect for food lately and by eating larger meals, but healthy, it stops me from feeling the need to snack.

I have maintained for 4 months now and I am extremely happy as this is the longest I have ever maintained my weight. Usually after losing weight it starts to creep back on after a month or so.
