Oh my gosh, brain is too fried from the heat and too little food for the past 3 days! So forgive me if there's anything too important in the last few posts as I cannot get my brain to focus to read
Ok, so quick, just come home meals!! This Jambalaya isn't the speediest of meals, but it's just made of stuff people usually have in the fridge/cupboard and whilst it's doing it's simmering you can go off and shower/spend time with hubby or kids/have a cuppa and watch TV
I like it because it's really not that much effort, but is really comforting and is welll worth the 30 mins!

Something else I've started doing as well lately is that when I have some spare time (like always, nowadays) I make huge batches of SW chips and freeze them after they've been parboiled. Lay them out on trays once they've cooled down, put them in the freezer and once they've frozen transfer to ziplock bags/tupperware and keep in the freezer for when you need them. Just like being able to grab normal frozen chips, but without the worry of syns
Frozen is the way to go for convenience really - and good value for money. I buy most veg like broccoli, peas, sprouts, swede, leeks etc frozen as they're actually fresher than buying 'fresh' (sounds weird, but they are flash frozen within hours of picking, so better than the veg that sits around in transport, on shelves for days etc). So for days when you need to add some superfree or just bulk out meals, it's so much easier to chuck some frozen veg in a pan for a few mins that stand there chopping for ages.
Also, easiest meal ever is just a spag bol - chop up some onion, a garlic clove, some mushrooms and get the spaghetti boiling. Soften onions in a pan, add garlic, then mushrooms, stir in some tom puree and a tin of chopped toms, bring to boil and then simmer until it's reduced a bit, and sort out the spaghetti while it's simmering.
Stir frys are also really quick and easy. I usually use the frozen chicken cubes as they're already cooked and just need heating in a wok for 10 mins till they're hot all the way through, or just use ready cooked prawns.To save time and effort as well, I just buy the jars of beansprouts from Aldis, grate some carrot, courgette (use a grater setting on food processor if you have one to make it even easier) and slice some spring onions and garlic and chuck that all in a wok for a few mins, stir in some sweet chilli sauce (1.5 syns for tbsp) and some soy sauce for a reeeeally nice saucey stir fry and serve with some rice/noodles.
Sorry if none of this makes sense or is not what you were looking for haha - as I said - brain is fried!! But, yeah, kind of went off on one there, hope there's something useful in it though
