DOING SW FROM HOME???

Hey Girlies!
Well I was dreading WI last night but I only gained 1lb! I'm happy with that considering what I ate n drank on holiday!
Here's to next week!

My friend has decided she's not going to class anymore and she's going to do it alone...so I'm in 2 minds whether to do the same! I'm glad I joined as I've learnt a lot more and lost more since I started on my own but were all proof on here that we can do it on our own!

Ah well done girls :) I'm so bloated I don't think I'll be having the cauliflower soup again, it def does not agree with me at all! Eek!

Ah she had a bad tummy, but she wouldn't settle again so I had to stay up. I've come into Uni as I was off most of last week And ill be off next week as my little jacks going to get his squint corrected so he'll be off school for the week. Have loads of work to do too and now I just want to sleeps! Poor little dog tho. X
 
Well done Rosielea and Tilly! I bet you're happy with that after a hols!

If you don't mind going to group on your own and have the money, then keep going. If it works for you, stick with it. However, you can do it at home! I know you struggled to start with but you now have a lot more info and know what to do! You know we'll all help you where we can. You'd save £20 a month so with 2 months before christmas, that's a new christmas day outfit!! :)

Right then girls, heading to the shops in a bit and really fancy stuffed chicken breast. What shall I pop in it? Shall I get some philly and?? Are sun dried tomatoes free? I assume not cos in oil, maybe spinach but not really that tasty, ummm?? Will wrap in bacon I think. Something the kids will like too?

Any suggestions welcome :)

I usually put some basil, mozzarella, and sundried tomato not the one in oil. Or red pesto. Wrapped in bacon or Parma ham with the fat cut off. X
 
How about whizz spinach, philly, garlic and loads of pepper in food processor and then stuff the chicken with. Is not packet sun-dried tomato free.
 
If you do a Greek one that's nice too. With olives and feta and tomatoes x
 
It was lovely, no bread tho!

Basically, butterfly a chicken breast, spread passata (I used tom puree mixed with tom ketchup as for the kids), then layer whatever toppings you like. I put peppers, mushrooms, bacon and cheese on top. Fry light round the edges, put on foil and wrap it around the edges to catch the juices. Oven 190c for 20-25mins then grill for 2-3mins to brown up. If you don't add ketchup and use cheese as hexa, it would be free on ee (with salad/veg) and red.

The only stuffed chicken breast I've ever had, I stuffed with philly and sweet chilli sauce wrapped in bacon and it was deeeelish!
 
It's definitely sweet, but not overly so which is why I'm stuck between calling it cake and calling it bread haha! I reckon it's a good cake substitute, though I also think it'd taste good dipped in some butternut or pumpkin soup too :D

Ok, here it is! :)

Ingredients:

13oz self raising (58.5 syns)
6oz EL butter or margarine, softened (21 syns)
4oz sugar (22 syns)
2 large eggs
¼ tsp salt
1 lb plain cooked pumpkin
1 ½ tsp ground cinnamon
1 tsp ground ginger
1 ½ tsp ground nutmeg
1 tsp mixed spice

Method:
1. Spray and line loaf tins and preheat oven to 165C.
2. Cream the butter, sugar and eggs with an electric mixer until it’s light and fluffy.
3. Add the salt and spices and mix well, scraping down the sides.
4. Add alternate amounts of pumpkin and flour mixing thoroughly and remembering to scrape down the sides of the bowl to catch the pockets of flour.
5. Pour into the loaf tins until they’re 2/3 full and spread out from the middle.
6. Bake until a toothpick comes out clean (around an hour, but keep an eye on it).


Mm sounds yummy I've got some pumpkin steamed and ready to go in the fridge and a batch of roasted, that I've had to hide from the kitten he loves it believe it or not....

Chicken recipes sound lush too....lots of inspiration for the next couple of weeks
 
Afternoon ladies

Two days on plan, then yesterday went a bit haywire I didn't eat properly at breakfast or lunch, then didn't know what I wanted for dinner so ended up picking at stuff, I saw how fatal it is not to eat properly, so hoping it won't knock me too far off plan weight loss wise...

Today they had Eid celebration up at the school, fabulous time , me and little one had traditional mehndis done (henna tattoos) so I did sample some of the food absolutely lush, didn't overdo it too much though I shared what was on my plate with the kids (well apart from the ahem cake, if it hadn't have been a costco one I wouldn't have bothered but of course it was and I couldn't resist. I'll reclaim some being good back with just free soup for lunch, then I bought home some of the goodies for the dinner tonight so I'll make SW friendly curry and samosa for myself with yoghuurt and mint dip and let the others share the rest of the things, I have had an idea for SW friendly version of the rice though..mmm, Just wish I could cook Indian and it taste like the real thing...
 
Ah SW pilau is really easy to do, you just spray some fry light or if u have the Bertoli spray oil that's 7 sprays for 0.5 syn is better, heat tsp cumin, tumeric, cloves, cardamom pods, salt pepper then fry to release flavours, add rice and fry to coat for a min or so, then add water or stock just enough to cover by 0.5cm, cover turn as low as poss and cook for like 10-12 mins. I add peas and stuff to mine, or chickpeas is a good one too. Or if its a green day some nuts is nice :)
 
(I'm just making a lamb and sweet potato curry for tonight, I'll be making this rice to go with it, with peas, cauli and sweetcorn)

Ah lush! I love love love Indian foods :) super jealous! The puppy getting up so early has totally thrown me food wise today, I've totally stuck to plan, but feeling like its dinner time now, using the slow cooker for the first time :) exciting stuff for me.

Indian is probably one of the things i'm missing at the moment - i know i can make it myself but its never the same is it? I could just eat a tikka masala with a big fat garlic naan bread! Maybe i'll let it be my weekend treat this week :)
 
Hello :) Feeling a lot less stressed today probably due to the fact I slept a disgusting THIRTEEN hours. Thank God I only had a three day week this week.

Was good last night, ate probably too much lean protein but I suppose it's all good stuff..? Made a HUGE fruit salad today so that's in the fridge for next time I get cravings (but hoping to have some more of that tomorrow instead. Had a rather sizeable 'brunch' of half a small baguette with sandwich-chicken in it, and also 1 weetabix mushed up in some of the fruit salad with fat free strawberry yoghurt. And diet coke. So quite big but will have salad and veg and a bit of fish for dinner to equal it out :)

I've found this link but I don't want to risk being banned again by posting a link - how many posts before I can post links? It's got loads of really good recipes, would love to share it.
