Hey Donna, just checkin in to say hiiiii!! You're doing great and your food is looking and inspiring and gorgeous as usual!! You're having great losses and don't let that BBQ moment throw you- it was just one day and as you said yourself, that's life!! Important to have little blowouts now and again to keep us sane- I have lots!! Hope you're feeling much better and back on track!

Mum went in for more chemo yesterday- they had a lovely time on their river cruise in Portugal and she felt well enough to get about and see things (and get tipsy on port lol) xxx
 
Ah I think your BBQ moment was pretty minimal actually. You've done so well. I must try the curry but give me your SW recipe for Eton mess pretty, pretty please.

Everything looks gorgeous as always. I see like me you've not been on the forum as much. I thought I'd have more time now I wasn't working as much but there always seems to be something there to fill it.

I am here .... missing you all like mad because I need you so much to keep me on the straight and narrow....managed to lose the grand sum of 1lb over the last two weeks but its minimins and my friends here that keep me motivated and focused....so I have five weeks until I fly to corfu so I have want to be under 16stone I don't care its by a miilionth of a lb as long as I am under the 16 stone mark

So this week I have been selling selling selling....all megs old toys...divided the money to the kids for their holiday spends, still got loads to get rid of but seem to have no time on my hands whatsoever...anyone specialise in time management? if so please organise me!!!

Meg now has her leg in plaster - went to Fracture Clinic on thurs and we spent the entire day there and meg ended up having her leg set in plaster twice as they found a second fracture under her knee after the first cast...so much for a cheeky day off!!! Fingers crossed the cast will be removed in 3 weeks time just in time for holidays

As you can see the first man who applied Meg's cast was very creative!!! Sadly it was only on for 3 hours before it was replaced with a solid pink one from thigh to toe!

Eating a yummy bowl of Tomato & Chilli Soup it is so good!

Donna's Red Hot Tomato & Chilli Soup...

Right - you can make this as hot as you like, full of super speed and syn free!

Frylite
Two large onions - chopped roughly
4 large carrots - chopped roughly
Garlic
2x 400g tin chopped tomatoes
1 pint stock
Tomato Puree
2x green chillies chopped ) use as many/few as you like
PLUS CHILLI FLAKES ) optional
Tomatoes (roasted) optional
Pinch sweetner
Generous squeeze of lemon juice

Fry onion and carrot in frylight for 5 mins,
Add garlic and chillies, cook for 1 min
Add chopped toms, stock, pinch sweetner, lemon juice and chilli flakes (if using) bring to the boil
Reduce heat and simmer for about 30 mins, add more water if you like
(I had loads of tomatoes wrinkling in the fridge so I roasted and added them to the simmering pot)
Pour into a blender and whizz til smooth, I must admit I find this easier if you use a colander to catch the veg and then whizz veg add to soup bowl and mix well

OMG its so good...never realised how nice a ryvita tastes dipped in soup!

Loaded Potato Skins

Absolute heaven on a plate!!!

Potatoes
Egg Yolk (per potato)
1/2 tsp dried mustard
1 HEB cheese (of your choice) I opt for the 40g Reduced Fat Cheese, grated
Bacon (fat removed, cut into strips and fried in frylight)
Spring Onion, chopped

Crispy Jacket Spud: tip some salt on baking tray, frylight potatoes and roll on baking tray, bake as normal (you can blast in micro and then frylight/salt and into oven)

When potatoes are lovely and soft, remove from oven, cut down the middle and allow to cool for about 5-10 mins

In a bowl - mix you egg yolk, mustard, spring onion, cheese and bacon
Scoop out potato add to your egg & co bowl and mix really well
Spoon back into potato and cook for about 15 mins until the top starts to brown

DELICIOUS!!!

there are endless combinations you can do with this.
 
Hey Donna, thanks so much for your messages of support!!! I was so touched to read what you said about you and your Mum lighting candles for my Mum!! That kind of thing means so much and as they say in Tesco, every little helps!! Thank you thank you thank you!! The folks are in Portugal at the moment on a river cruise!! After ending up in hospital with plummeting Hb and platelets a couple of weeks ago, she asked if her next chemo could be delayed until she comes back from holiday- after all what's 2 weeks in the grand scheme of things?! Better than cancelling a 5K holiday or being too poorly to enjoy it!! So her next chemo is next Tues the 19th, which is 2 days after they get home!!

Wow, having been out of the loop (slap wrists!!!) for a more or less a month, I see that you're doing fantastically well!! 19 lb in a pretty small amount of time is excellent and your food diaries and photos are really really inspiring!! I'm going to have to take some inspiration from you!! The pics always make my mouth water!!!

Hope to catch up properly soon- I'm in the process of catching up with everyone- it's no small task!!!!

Hev you are so lovely, your poor mum but I have to say in her position I'd have taken the cruise over chemo any day. My friend's wife is battling breast cancer at the moment and she is experiencing every awful symptom my mum did, on her second bout of chemo she had an allergic reaction and her heart stopped - how terrifying for her and my lovely friend Kev - I hate cancer...to all of you running the Race of Life - thank you!!!

I am going to be hosting a bbq on Saturday, housesitting the parents and they have a garden - whoop whoop - and the Honey and Mustard is going to feature on one of the spatchcock chickens I am doing!

Right - I love satay chicken and that would always be my preference but I have to say it was good and Paul loved it as well and so simple to make

I'm so glad they enjoyed their cruise - love that she got tipsy!

Life has been so manic the last couple of weeks that I just haven't been able to get on minimin boards and i can't do SW without you all

Oh Red - the Eton mess was so throw together, basically crushed up a meringue sprinkled some at bottom of glass then added layer of thin cut strawberry then yog (i used the muller lite cranberry and raspberry which is my fav), followed by meringue, straw and yog until I got to the top...don't like strawbs but this was fantastic...only problem was the kids now love meringue so the box didn't last long

I need someone to come and help me get the most out of my day - I am sure I waste time cos there just aren't enough hours in the day for me

Hi Donna u have done well to lose a lb with how hectic it's been for u x I sts surprised I didn't put on I binged for England for 2 days eeek lol back on track now tho, Have a good week xx

Roast Chicken, Roast Potatoes, Roast Onion, Broccoli, Aunt Bessie Stuffing Balls (3 syns each), Gravy (1), SW Yorkshire Pud (1 syn each)

If you haven't tried these yorkshire puds, give them a go they are fab, I cooked 10 in 10 individual silicone cake cases, all 10 have been gobbled up!

Salmon Fishcakes, Potato Wedges, Salad & Tartare Sauce

Salmon Fishcakes
Potato Mash, Smash, any = I used leftover roasts probably about 2-3
1 tin salmon (any bones removed)
Lemon Juice
Dried Parsley
1 tbsp mayo

Mash salmon and potatoes, add lemon juice, parsley and mayo, mix well
Shape into patties and try and leave in the fridge for about 30=45 mins
Warm up pan with bit of stirfry, place fishcake into pan and leave to cook gently for about 4 minutes per side
Serve with tartare sauce (even if it is 3 syns per tablespoon!)
