Been an absolute manic week at work...good news...after 8 years in the waiting...I am finally getting a pay increase...not a huge amount...but because it has taken the Council so long to sort out, we are all getting compensation (originally backpay but they can't afford 8 years backpay for all) so we are getting 3 years worth...am delighted because that's next year's holiday and this Christmas paid for

Have been exhausted this week am trying to keep up but failing miserably...but I am still 100% focused

I have swapped nearly all my drinks (tea and fizz) for lemon and water either hot or cold

Kids are away this week, so I can concentrate on work as we have a big inspection coming up and I need to ensure my paperwork is 100%

Hope you all have lovely weekends planned...keep focused and if you fall off the wagon, draw a line and jump back aboard the SW train the next day xxxxxxxxxxxxxx

I went to Barleylands farmers Market on Saturday morning, I bought 8 massive lemons, they are the size of my fist! I am a lemon fiend at the moment! I have been having hot lemon, cold lemon and squeezed lemon in 7up free - yummy and refreshing. It's a great place isn't it? Although the cheese and bread stalls were calling me - I resisted though! I bought some giggly pig sausages which are lovely. I spoke to the lady on the stand and I mentioned SW and syns and she said that she went through the process of an SW cert but SW stopped taking on butchers. I have to say I believe that they can't be much, if any, syns as no fat whatsoever came out of them. I haven't had many but what I have had, I haven't counted.

Hi Charley - sorry its taken so long to reply - what did you think of onion marmalade - I made some last weekend and haven't eaten it since, was making Paul's lunch today and put some in his sarnies - omg it tasted good i added extra chilli flakes and boy did it pack a kick lol!

Have only been to Farmers Market - was the soup lady there? she does the most amazing soups - the Barleylands Shop that I go to is a bit further up, I will have to take you - I think Paul is working Tuesday so if you are still free..text me!

Cottage Pie (or savoury mince topped jacket spud with a sprinkle of RF ex light cheese!)

For the topping
  • 800g/1lb 12oz floury potatoes, such as King Edward or Maris Piper, peeled and cut into even-sized pieces
  • 40g/1½oz butter, cubed (I LEAVE THIS OUT ALSO)
  • 3 tbsp milk
  • 100g/3½oz mature cheddar, grated (I LEAVE THIS OUT ALSO) or serve over jacket spud topped with cheese!
  • salt and freshly ground black pepper


Heat the sunflower oil in a large deep lidded pan over a medium heat and gently fry the onion, celery and carrots for 7-8 minutes, or until the onions are softened and lightly coloured. Add the garlic and cook for 2-3 more minutes.

  • Add the beef mince to the pan and cook with the vegetables for 4-5 minutes, stirring frequently, until the meat is browned all over.
  • IIF USING) Pour the wine into the pan, bring the mixture to the boil and cook for 4-5 minutes, or until most of the liquid has evaporated, then sprinkle over the flour and stir well for a few minutes to prevent any lumps from forming.
  • Gradually add the beef stock to the pan, then add the cold water, tomato purée and dried herbs. Bring the mixture to a gentle simmer, then cover with the lid and cook over a low heat for 25-30 minutes, stirring occasionally, until the mince is tender and the sauce has thickened. Season with a splash of Worcestershire sauce and salt and freshly ground black pepper. Remove from the heat, spoon into a 1.5 litre/2 pints 13fl oz ovenproof dish and set aside.
  • Preheat the oven to 200C/400F/Gas 6.
  • Half-fill a large pan with cold water. Add the potatoes and bring to the boil, then reduce the heat to a simmer and cook for about 15 minutes, or until the potatoes are very soft.
  • Make Mash
  • Spoon the mash over the mince mixture in the ovenproof dish, working towards the middle from the outside. Smooth with a palette knife. When all the mince is covered with mash, create patterns on the surface using a fork.
  • Place the dish on a baking tray and bake in the centre of the oven for around 25 minutes, or until the potatoes are golden-brown and the filling is bubbling up around the edges. Serve with freshly cooked green beans or shredded Savoy cabbage.

I hate it when you slave to make something and it turns out crap. What did you use? The cheese sauce you were asking me about? I reckon the sauce we use for the carbonara would work well, although you would either need both your HEAs for the philli and for grated cheddar on top (or allow 6 syns)

Made the SW Doner kebab which we have had before and I have loved but I just couldn't face it - I'm not a huge lamb fan and I think the smell of it cooking and heat just turned me right off!

Paul and the kids were delighted to have my share lol!

Also, I know exactly where you're coming from on the kebab situation. I cooked it once and even though it was sooo like the real thing I just can't stomach it again! If I ever get the cravings I think I might just syn a proper one!!!

No I didn't use it because stupid me realised it was white sauce so I used the Biso cheese granules - smelt like sick when you made it and was tasteless, wasted the cauli really - only ate 1/3 of it, rest went straight in recycling bin - there will probably be a loot of sick worms at Pitsea tip today lol!

I agree I am going to have carbonara cauliflower late this week x

Oh Loundy - I hate lamb - my house smelt like the local kebab shop - which is great when you are p***ed as a newt at closing time - but it was a hot muggy and sticky evening, even cutting it was a struggle, will have to keep it as a winter dish

Loundy - I would say the exercise has def helped - the 5 min (programme has 5, 7.5 or 10 min workouts) are great and you can fit them in really easily, i have trebled the amount of fluid I drink and replaced 75% of my fluid intake with water and lemon, so many 1-2 cups of tea a day and a glass of fizz as a treat and smaller carb portions - I've had very little pasta in the last 2 weeks

I was talking to my friend who is a slimming world yo-yo like me and she said that she got stuck after a couple of big losses like I did, her consultant told her her body was in shock and to just work through it - she's 5 stone lighter - so I shall be thinking of her if my losses slow again

I was v naughty today and tr-cheated myself to two slices of white bread, 2 hotdogs with american mustard and tomato ketchup...really strange but the sandwich didn't taste nearly as good as I remembered it being and 30 minutes later I was very very sick....6 weeks ago I could eat 1.5 rounds of hotdog sarnies....shocking!
