Em's diary

Not far now Jaqys - scales haven't really move this week again so hoping for another bit of saturday magic tomorrow!

I am getting there re weight - will be interesting to see how I feel at goal, though I don't think I'll move it again.

I've definitely had less milk this week. no more than 2 in an evening when before it would probably have been 4 and I would probably get through 4-5 pints a week in work and this week it's been more like 1.5 I think. Been mixing it up with a few black coffees and some camomile tea.

So Em, the silken tofu I can just bung into my cake mix!!?? - it's runny?

i bunged it in yesterday and it went a bit lumpy so i stuck it all in the blender and gave it a whiz. i think next time i'll just put it all in the blender to start off with. i used about half a pack of mori nu from the tetra pack but the only kind sainsburys had was the firm version i think asda do a softer one but i don't know how much less firm that would be. the blender got rid of any lumps though - it seems to be a quality of tofu that it just blends into a smooth paste.

are you thinking of trying it? i am usually ready for the rest of my galette about half 3 and i didn't even think of food again this afternoon - it filled me right up after lunch!

B: half cinnamon galette
L: 1 fillet smoked mackerel, 200g luc lac turkey, 1/4 tofu yogurt cake
S: rest of galette
D: chicken frittata
S: small bowl sweetened greek yogurt

Breaking news..... another 1lb off this morning puts me on 10.5 stone, and I've just managed to squeeze myself into a pair of size 10 trousers!!!!

i can confirm asda sell the firm silken tofu - they didn't seem to have the softer kind, but it was fine once blended. i'm going on a march to morrisons in town on monday so i'll check there too. might have a mooch round a health food shop or two one lunchtime next week too...

Thanks DD, it's an asda 10 and i'm pretty sure they're generous with their sizes but still...

B: cinnamon galette
L: butternut squash soup with chicken pieces in it
S: 1/4 yogurt cake
D: large bowl bolognaise (1/3 500g pack mince) with garlic quark dip
S: sweet omelette

well done hun xx
If you get stuck on the tofu try the japenese kitchen website i know they do it

Cheers scrumper, the firm one works fine once blended, I'd just be interested to see how the softer stuff compares.

B: 3/4 cinnamon galette
L: 180g king prawns, 1 fillet smoked mackerel
S: 1/4 galette, 1/4 tofu yogurt cake
D: 250g ish mince in rosemary & mint meatball format with mint quark dip
S: bowl sweetened greek yogurt

Even though the box says firm its still silken tofu, which tends to come in 2 types firm and extra firm, not firm and soft. It is the soft stuff, it breaks up easily and absolutly cant handle being used like normal tofu.

Yes, sorry it is the silken firm I've got and that was fine. I've just seen silken soft on the Asda website and wondered how it compared is all. Must try and track some fresh stuff down!

I used firm tofu the first time I made the recipe a few years ago now. I chopped it up into small cubes, stuck my electric whisk into the bowl, and liberally sprayed it around the room, walls, ceiling, etc.

Eek! that would have been a nightmare to clean - i'll be sticking to silken, don't worry. The folks popped over yesterday and tried some and requested the recipe, so more proof that it doesn't taste like diet food!

B: half cinnamon galette
L: 200g pack smoked fish selection, 1/4 yogurt cake
D: 300g luc lac turkey
S: rest of galette

I need to patent my tofu yoghurt cake recipe pronto! I could end up as rich as Dr. D!

Smoked fish selection - tell me more. Sounds delicious and I'm looking for things to pick up for my holiday. Tesco only stuff though please (cos it's the only place I've found open in the middle of the night Good Friday -> Easter Sat!)!!

It was lovely Jo, 2 fillets of mackerel (1 peppered) and 2 small fillets of (baked) smoked salmon - was stuffed afterwards, but I'm afraid it was from Asda. I've looked on the tesco website and they don't seem to have an equivalent. Your tofu yogurt cake has changed my life a bit really - who knew that something could be so delicious and so good for you! It's something that will remain frequent in my menus for a long time to come i think.

Another day in our Birmingham head office today, which is why i've not been able to get online today, so up at 5.30 for an extra early start. Train delayed for way back so didn't get in till 7pm - am totally shattered now, but only 2 more days till a lovely long break - can't wait! Will be interesting to see if my saturday weigh in theory applies to non saturdays when i'm getting more of a lie in.

B: half cinnamon galette
L: 100g cooked chicken, 200g r&m meatballs
S: 1/4 yogurt cake
D: still feel stuffed after the cake at the train station, so will probably have the rest of my galette with a cup of tea and call it a day at that!
