Erm's Photo Diary

I was gonna try this as a base with some other stuff to jazz it up - but curried beetroot with coconut milk? Does that sound ming to any else but me?

Hi, just come across your diary and I'm now starving! The foods all look so delicious. I am going to make your veggie shepherds pie later. Are puy lentils the green ones? Thanks for sharing all your recipes :)

They are green but it's important they're NOT the split ones or they'll turn to mush! You need whole green lentils. Puy are best but any that are whole will do. I know Tesco and Waitrose both do an own brand version.

I have just eaten the veggie shepherds pie - OMG it is sooooo good. Thank you for the recipe. I think it's just 2 syns (wine) plus a hexa for the cheddar on green and extra easy. Do you agree? It's definitely going to be one of my new favourite dinners. I am going to try and get the kids to try it too. X

Ermie hope you're okay! Hope the pain in your leg isn't what's keeping you away! Take care of yourself, hope you feel better soon.

those chips look lovely :) and dont worry about your panini - you always get back on plan and like you said, no more holibobs before xmas now :) xx

I've been meaning to ask, are your plates those old fashioned enamel ones? I love them! Got a few enamel pieces off Amazon and i think they're so cute and retro :D

Monday 19th - Green

Breakfast: Coffee & Toast 1 HEXA, 1 HEXB, 2 syns
Lunch: Massive bowl of salad with mixed veg, 3 Cauldron sausages 3 syns and leftover curry from last night.
Tea: Had a go at me new veggies! Quorn curry with mooli salad and rice plus Honey's Tostones! I need some practise (and a new oven...) About 2 syns for mustard, oil, orange juice etc in the dressing
Snacks: 2 peaches, Bovril, box of blackberries in Coconut Muller light.

Here's the mooli salad and Quorn curry. Was quite nice but might change it a bit next time. The orange made it nice but it needed something else, maybe raisins or nuts or something.

And here's the tostones, this didnt do well, my oven is a cremation pyre  but OMG they tasted good!

The first lot I checked at 10 min and they were already burnt to a crisp:

But I squashed them anyway and gave them a taste:

and they were sooooo GOOOOOD I decided to sacrifice my other plantain as well, I was gonna use it for something else but I can always pop out and get some more, so I turned the oven right down and kept watching it... It didn't burn exactly but it just kept drying out :( Maybe they were slightly TOO green? But its probably just my oven...

But I didnt really care cos they tasted sooooo fab! Theyre like very-slightly sweet biscuits, why bother with HiFi bars and all that jazz when you can have plantain?! I handed one to the b/f who gobbled it up and went "oooh oaty biscuit!", exactly! :)

As they were quite sweet and biscuity I didnt think they'd work for scooping up my curry, (as Id just concocted it out of my head and I thought it probably wasnt the right kind of curry) but OMG it soooo worked! Yum yum!

I kept thinking how gooood they'd be with Total 2% and a bit of honey.... was gonna try it after tea but by then they'd all gone... :(

I'm sure they'd be even better if I improved my Cooking Skillz, any advice in how to Do It Properly appreciated :) :D

ALSO I figured they'd be synned as they were cooked and a bit like bananas so a fruit? But they're not, even cooked they're FREEEEEEEEEEEEEE!!!! :eating:

PS Pix are all OOF as there was crap all over the lens :( But hey, its nicely thrown the background out or summat...

Noooo I got these cheapo from Argos about eight years ago when I moved into my new flat! They're falling apart now, you can see big chips in the edges  I keep meaning to get some new ones but I never get round to it. I fact I'm on me last mug out of the set now so when that dies a new set will definitely be in order! :D

I think next time Ill try the pre-squashing bit of cooking either wrapped in foil or in the microwave, then crisp up the flat bit in the oven. That might work better?
