It's adapted from an idea in
this thread. We've done all sorts of things with it
This one is my latest experiment
The basic mix is:
- 1 x 300g pot fat-free cottage cheese (I use Tesco Light Choices cheese & chive)
- 1 x 88g pack Instant Smash
- 3 eggs
- 50g low fat cheddar
Mix it all up, knead it into a sort of dough and then do what you like with it - cobbler topping, cheese scones, dumplings, add more ingredients to it (herbs, Marmite) whatever you fancy.
For the twists I rolled about 1/3 of the mix out flat, spread a (very) light layer of Marmite on top and sprinkled with another 30g low fat cheddar/ Then I cut it into 9 strips and (tried!
) to roll them into twists. Thats where things got tricky! :8855:
I got the idea from the picture in
this recipe, yeah mine didn't come out so neat...
but I dont care cos they were OMMMMMnacious!!!! :drool:
Yeah, next time lots less eggs, probably bung it in the whizzer before I roll it out. (And there WILL be a next time
)
