Didn't the milk allowance go up to 400mls for skimmed?

The skimmed milk allowance did go up, it used to be 350ml and the new allowance is now 375ml so the s/w web site is right.

The red curry recipe was in a recent SW mag. I put too much coconut milk in it so I need to try again and follow the recipe! I posted it a few posts back but here it is again if you fancy giving it a go! :)

Yeah sure I got it from the Takeaway Faves recipe book that came with one of the recent SW mags.

Ingredients for 2 servings
1 tbsp thai red curry paste
75ml light coconut milk
150ml chicken stock
2 chicken breasts, sliced
frylight
I used... (but you can use whatever asian-style veg you like)
babycorn
red onion
mangetout
red pepper
spring onion

1. Wok fry the chicken and veg in frylight until the chicken is cooked through and the veg soft. Set aside.
2. Put the curry paste into the wok and add the stock and coconut milk, stirring until combined.
3. Add the cooked chicken and veg to the wok and leave to simmer for 5 minutes or so. Serve!

It should be 2 syns per serving. The one I made was more as I put more coconut milk in, which I wouldn't recommend!

I keep planning to start the shred again then being too tired after I've put everyone to bed, tidied up and got ready for the next day! Definitely starting tomorrow night!!

Nope! Haha. But I have absolutely no excuse as I'm basically sat on my bum all day whilst I'm looking for a job!

What do they say... "inactivity breeds laziness"!

Ooh and I forgot to congratulate the OH on going a whole week booze free (this is a big deal for him)! His treat was a pint of ale with his jacket potato at lunch yesterday!

I'm so chuffed at how much he's getting into this. He's even declining cake and biscuits without me having to nudge him.

Has anyone got any recipe ideas for what to do with cod, aside from fish & chips and fish pie? I need some inspiration!

Oo yes! I have this lush Jamie Oliver recipe, I'll send you it when I get on the laptop x

I would do a tomato and chorizo topping and serve it with rice :)

Ooh that sounds good. I should actually just take a look at your blog as you always have fab recipes! I will have a look now in fact x

I'm not sure if I already told you guys this, but the week before we came back from travelling our car got broken into and ALL of our clothes were stolen. We need proof of purchase (who keeps clothes receipts!?) so we had to get years of bank statements sent out to us so I've been sorting through all of that today as we finally have everything needed to submit the claim. The silver lining is that I will soon have lots of money/clothing vouchers so I can replenish my wardrobe - and hopefully in a smaller size! I'm so used to wearing a 12 that I will need to consciously start picking up size 10's in case I can make them fit!

Food Diary...

Breakfast - mullerlight strawberry, banana, blueberries

Lunch - 60g wholmeal roll (HEXb), 2 tsps flora extra light (1 syn), egg mayo (0.5 syns), lettuce, sweet potato chips, cucumber, carrot, 1 tbsp asda 30% less fat houmous (2 syns)

Dinner - Homemade pesto (1.5 syns for Parmesan), 2 slices parma ham (1 syn), red onion, courgette, red and green peppers, 25g rf cheddar (HEXa)

2 tea w/ skimmed milk (HEXa)
1 tea pigs mint & liquorice
Sparkling water

OK, its a jamie oliver 20 min meal, I just left out the oil.

u need : garlic clove, some fresh coriander, red chilli, tin chopped toms, 1 medium courgette, 1 small red onion, 2 cod fillets, 1/2 tsp cumin, 200 cous cous, 1 lemon, salt and pepper.

So: slice garlic, and chilli and separate the coriander leaves from stalks, then finely chop the stalks and leave the leaves to one side. Fry half the garlic, all the chilli and coriander stalks in some fry light (i use the bertolli spray olive oil its only 1/2 syn for 7 sprays and is way better than fry light I think!) Fry til the garlic has browned. Add the tinned tomato, season and simmer for 5mins.

while the sauce thickens up, roughly chop the courgette and red onion into wedges.

Add the fish fillets to the tomato sauce cover and leave to simmer for 10 mins.

In another pan add some more oil/fry light fry off the courgette, red onion and add the cumin, season and allow to soften.

Put the cous cous in a bowl, add 200mls boiling water, cover with cling film and leave for 4mins. then add the veg to it and recover.

Check the fish is cooked, and season.

Grate some of the lemon zest, put to one side then cut the lemon in half. take the clingfilm back off and squeeze in lemon and fluff it all up.

Half the cous cous, then place the fish on top if the sauce is a bit thin then just put the fish on the couscous and bang the sauce on a high heat to reduce for a min, add some sauce along with lemon zest, and coriander leaves, serve with a salad.

Its lush! And syn free :) xx

That sounds really good! I'll be trying that next week. Thanks! :)

We're going to Barmouth this weekend with the OH's parents so there is no chance of a SW friendly weekend. Plus they insisted that the OH's brother cook for us tonight - I've seen him cook and he's as bad a Jamie Oliver when it comes to oil. I offered to cook but he insisted so what can you do without offending? The OH said to make it healthy with no oil but then his Mum said a little oil won't hurt. So basically off plan from this evening until Monday. Therefore, I decided to weigh me and the OH in early and we'll weigh again officially on Tuesday to see what the damage is!

Me... 10st 4.5lbs (2lb loss)
OH... 13st 10.5lbs (1lb los
s)

Food Diary...

Breakfast - 2 Nimble wholemeal (HEXb), scrambled egg made w/ 50ml skimmed milk (HEXa), smoked salmon, 2 tsps flora extra light (1 syn)

Lunch - Pasta w/ homemade pesto (1.5 syns), red onion, courgette, 1 slice of parma ham (0.5 syn), 15g rf cheddar (HEXa)

Snack - 4 mikado (2 syns)

Dinner - Spaghetti Bolognese made by the OHs brother (only syns in the oil I hope - 6!?)

2 tea w/ skimmed milk (HEXa)
1 tea pigs mint & liqourice
Sparkling water

Total syns = 11

Hey, your food looks absolutely amazing.
I still live at home so trying to get my parents to get in to the SW way of life as well! I struggle with the amount of syns, I eat out regularly with my friends and whereas on WW I could just eat plenty of fruit and save my points for the evening, I can't do that with SW and so I struggle and tend to go over my syns! Argh! Hopefully I will get in to it x

I'd recommend you cook your meals separately if you're able. I've had to move back in with my parents temporarily with the OH whilst we look for a house and I do all my meals separately as it just makes life easier as I can control what goes into our food and I can plan my daily meals without having to worry about what my parents are cooking. To be honest I prefer what I cook to them anyway so it suits us fine and they don't get offended.

Eating out is also a big part of my social life so I understand your struggle. Luckily I'm too skint to go out for dinner at the moment! But when I do I recommend Italian chains as you can stay safe with tomato based sauces - just avoid anything with "cream" in the title. Steak and fish are good options too as you can ask for any sauce they come with to be served seperately and have butterless veg and new potatoes with it. I tend to recommend Indian too as a Chicken Dhansak and plain rice is 6.5 syns per portion and I love i
t.

I've never done weight watchers but I've heard it's very different from SW. But once you get your head around the rules, get used to cooking from scratch, and learn what you do and don't like it's like second nature. Have you got a food diary? If not I recommend doing one, especially whilst your new to SW, as you can see exactly what your eating and how many syns you're having, plus everyone on here will tell you where (or if) you are going wrong and they'll give you lots of tips and support. Let me know the link when you start one, or if you have one already! Good luck x
