Food ideas for green days.
Stuffed Peppers
1. Make a bolognaise sauce - with beef, pork or quorn mince. My sauce is made with 80g of beef or pork mince + 40g of grated carrot per person - which makes it a HexB on a green day and you really cannot tell the difference in taste or texture like you can with quorn.
2. Add a small handful of tiny bits of uncooked pasta - this just soaks up some of the sauce and thickens it. I use what's called
fideos in Spanish - basically it's just ½" long fine spaghetti but you could use the tiny baby shells or chop up some ordinary spaghetti.
3. Use a medium red pepper per person. Chop in half lengthwise. Remove all innards but NOT the stalk - otherwise the filling falls out! Yes I've done this once. Microwave pepper for about 5 mins on full to soften and part cook it.
4. Place peppers in an ovenproof dish and fill the half peppers with the bol sauce.
5. Grate a small amount of cheddar on top.
6. Bake in oven at 200c for about 30 minutes.
7. Serve with a salad
Stuffed Mushrooms (for 2)
4 large field mushrooms - the big, flat open variety
2 rashers lean bacon - chopped into small lardons
½ onion - chopped very finely
2 slices wm bread made into medium breadcrumbs.
1. Remove stalks from mushrooms and chop finely.
2. Fry chopped mushroom stalks, bacon lardons and chopped onions in fry light until the onions are soft. I actually use 1 tblsp of olive oil and syn it as it tastes so much better!
3. Mix in the breadcrumbs to bind it all together.
3. Divide the mixture into 4 and "stuff" on the top of the mushroom.
4. Grate a little cheddar cheese on top.
5. Bake in oven at 200c for 20 minutes ish!
6. Serve with salad.
