Awww. It will just be coz ur eating loads of carbs again and your body just isn't used to them. Give it time. Hope the diet is going well otherwise.
Hope you are feeling a bit better soon, things should settle down after a night's rest hopefully. If I get trapped wind the only thing that ever helps is sipping warm water / peppermint tea and lying down as long as possible - its almost always gone by the morning.
