Hey hon, I don't get on here often but just stopped by for a read. Nut butters and dark choc are yummy but they stall me - I only have them in maintenance mode these days. I really would try ditching them for a solid week and seeing how you go. Also avoid grapes, cherries etc - stick to controlled portions of strawberries, raspberries, rhubarb if you're craving fruit. I saw you were eating burgens & cutting that out was a good move.
It's not just how many carbs you eat, it's where they come from. Wheat from the bread and the high sugar levels in grapes etc can mess around with your blood sugar levels which causes stalls and gains. The gains are 'false gains' ie: they're water, but they still can be depressing. Do remember that even when you're showing a water gain you can be losing fat underneath.
As to snacking - you don't eat many eggs so I don't know if you're just not a fan but it can be a great idea to make a big crustless quiche and eat slices of that for a couple of days as snacks. Boiled eggs are good too. Eggs are a near perfect Atkins food. It's best to try and snack on clean foods like that rather than processed meats etc.
Salt: don't avoid it, you actively need extra salt when in ketosis. The only reason anyone should avoid salt is if they already have high blood pressure - the idea that it actually causes blood pressure problems is a myth (I have clinically very low blood pressure and eat a ton of salt - it doesn't raise my levels, unfortunately). But really, ketosis means you're flushing salt through faster so you need to make sure you're getting enough.
Some days it doesn't look like you're eating enough. I realise when you've had a snacky day it can look like you've eaten loads - if you can try and stick to meals with less snacks but otherwise have good snacks prepared and in the fridge so you don't go for the almond butter.
Exercise has been shown to be more effective for toning than weight loss - it can actually be a negative factor in weight loss, so it's great if you can do some but don't beat yourself up if you can't.
In fact, beat yourself up less in general! If you were eating lots of donuts and choc bars before, as you've said, then you've improved your diet 100 percent already and it will pay off.
