Sweet potato & lentil curry

Here it is ..

So ..
1 onion chopped
300g sweet potato cubed
100g dried red lentils
1 veg stock cube dissolved in 500 mls water
1 tbsp curry powder
1/4 tsp ginger
Garlic granules or cloves - I used granules n put in 1 tbsp
Handful of plum tomatoes
Any mixed veg you like

1. Fry the onion with the garlic - add the tomatoes
2. Add in everything else (spices, potatoes, lentils & stock)
3. Leave to simmer til the lentils are cooked as the potato will cook before the lentils
4. Enjoy

So easy to make :) and really filling n tasty

Breakfast- 2 x LM sausage, beans, mushroom, roast tomato and homemade potato cake
Tea- leftover vospov khyma with a little plain rice, cauli and sprouts
Lunch for work- hummus & tomato wholemeal roll (HEB + 1 syn), redwood slice on wholemeal roll with tomato (HEB + 1 syn)
Snacks- french fries (4 syns), an apple and a tub of fresh fruit salad
 
Thank you Tace.. this is what i'm planning on eating, does it look ok? I know it doesn't look a lot but it's what I have for now lol..

Breakfast: Apple and pineapple with a coffee - part hXa and 3 syns.
Lunch: SP Pasta & Sauce with hXb bacon - 1.5 syns
Dinner: WW lasagne with green beans - 5.5 syns (I think, online research has lead me to believe the ready meal is 5.5)
 
Had a bad two days. Stuck to breakfast and then ate chocolates and chips. Yesterday I had proper breakfast then husband sabotaged me with pizza!
Back on it today!
 
Todays menu:
B - 2 slices 400g wholemeal toast with 2 tsps raspberry jam (HEB + 1 syn)
L - Cheese and broccoli pasta 'n' sauce (free)
S - Apple and grape snack pack and dairy free chocolate buttons (7 syns - both for cinema)
D - Wholewheat spaghetti and Tesco meat-free meatballs with tomato/chilli sauce, mushrooms, onions, garlic and chillies with 35g strong soya cheese (HEB + 3.5 syns)
200ml oatly chocolate drink (HEA) and Blue Diamond Almond Breeze in cups of coffee (part HEA)

Tea- 2 x LM sausages, SW chips, mushy peas and gravy (1 syn), jelly (1.5 syns)
Lunch for work- hummus & tomato wholemeal roll (HEB + 1 syn), redwood slice on wholemeal roll with tomato (HEB + 1 syn)
Snacks- french fries (4 syns), apple and fresh fruit salad

Lunch: Weightwatchers lasagne with fresh carrots dipped in 55g RF houmous - 6 syns and #1hXb
Dinner: SP Pasta & Sauce with cheese and bacon - 1.5 syns plus part hXa and #2hXb
Snacks: Carrot batons with home made syn free cheese. Grapefruit.

B - 2 Weight Watchers crumpets with 1 level tsp Vitalite spread (8.5 syns)
L - Cheese and broccoli pasta 'n' sauce (free)
S - 2 slices wholemeal toast from 400g loaf with marmite (HEB)
D - Wholewheat spaghetti and Tesco meat-free meatballs with tomato/chilli sauce, mushrooms, onions, garlic and chillies with 35g strong soya cheese (HEB + 3.5 syns)
Pud - Half a sachet of Weight Watchers sugar free strawberry and raspberry jelly (half a syn)
S - Chopped up strawberries and banana with 30g Alpro Soya Cream (2 syns)
200ml Koko chocolate drink (HEA) and Blue Diamond Almond Breeze in cups of coffee (part HEA)

This is my last day of being a vegetarian!!!
