Friday - Halloween day at work - Extra Easy

Breakfast - Banana

Lunch - brown wholemeal roll 57g turkey and salad, packet of quavers - 4 syns

Snacks - 4 chocolate fingers - 6 syns

Tea at 9.30pm been a busy day, but i have resisted the Chinese with my name on it. Chicken Parmigiana with spaghetti - 2.5 syns

Syns today 12.5 syns
8 syns remaining for the week

I weigh in tomorrow so hopefully this will motivate me not to pig out after tea and fingers crossed for tomorrow.
 
Well 5 days at 100% have definately done the trick today i weighed and i have lost 2.5lbs, so have my sticker back. But can i make it to 7 days 100%???

I am tonight for a few drinks with friends but just need to stick to my syns and should be fine.
 
Well with the drinks i didnt stay 100% and i had pizza too.
Hopefully i limit the damage this week by 6 days at 100% and lots of free food including vegetables.
One of my friends wants me to go to Zumba this week with her too so a little fun exercise should help.

In the slow cooker today I have:

1 Butternut (BNS) squash, diced
3 large carrots sliced
1 onion
1 tin of chickpeas
2 tins of chopped toms
100g red lentils (rinsed)
23g (just over a tablespoon) of curry paste pataks garam masala (3syns)

Chop the onion and dry fry in a pan until softened but not browned. Add the chopped BNS and carrot to the onion and cook for about 5 mins, then add the tinned things and lentils and heat through, then pop it all in the slow cooker. I'm cooking it on high for 4 hours, but it could go for about 8 hours on low.

Got this recipe for Gobolino's food diary its all in the slow cooker for tomorrow nights tea. So tomorrow i attempting a green day.

Well Zumba was amazing, hard work and i was soaked afterwards but really a great fun workout. If you have not tried it please do.

Right today, Zumba pains have not kicked in yet i dreading tomorrow. But as i enjoyed it and this is the first time i have enjoyed exercise in a while i am sure it is worth it.

I am having a roast chicken dinner tonight but really want ryvita, philli and noodles for lunch so i going to go for the green day and limit my meat intake.

Breakfast - Mugshot, Banana, Satsuma

Dinner - 71g chicken, 142ml of gravy made with juices - 7 syns, sprouts, cabbage, leeks, green beans and mash sweet potato.

Snacks - Cheese Curly crisps -3.5 syns, banana and mullerlight, Chocolate Chip cake bar - 7 syns

Total Syns today 17.5

Well i have had a terrible day.

It started well and the main meals have been fine, but i have gone over on syns and ate a whole bag of wine gums as well as 2 biscuits.

I think it just best to say today was terrible and focus on tomorrow, i think i may make a quiche tonight then see how tomorrow goes.
 
Well the weekend came and went and also i put 2lbs on. I have been terrible again drank too much ate too much how i think i will ever be 10 stone, i really dont know???

I have just spent the last hour surfing around minimins in the hope it will give me the inspiration to stick to plan.

We will see, i am so useless at sticking to plan and so good at eating all the wrong stuff.

Tomorrow it all starts again....

Crab Stuffed Haddock
This is so nice. I always forget how yummy it is!

Serves 2
2.25 syns per serving

1/2 stalk celery, finely chopped
2 spring onions, finely chopped
1 garlic clove, crushed
1 slice wholemeal bread, crusts removed (1.5 syns)
1 can crabmeat, drained
salt & pepper
1 egg, beaten (only need 1/2 the egg)
2 tbsp parmesan cheese (3 syns)
1 tbsp lemon juice
1 large tomato, deseeded and chopped
2 haddock or cod loins


1) Spray a pan with frylight and saute the spring onion, garlic and celery until softened. Remove from heat.

2) Add the remaining ingredients to the pan and mix well.

3) Put the haddock or cod in a dish sprayed with Frylight. Top with the stuffing and spray the stuffing with Butter Frylight. Bake in the oven on 180 for about 20 mins or until the fish is cooked and the top is golden.
 
Monday - Red Day

First day back on plan and it has not been easy.
Work was mad, it took me 1 hour for a 20 min drive home.
And now i am home, i have not prepared any tea so i am really struggling.
All syns already used but i do have a healthy b and red free food for later.
I am going to Zumba soon and still have to walk the dog, i will be so pleased for today to be over!!!

Breakfast - Oat So Simple with Sweetner

Lunch - Plaice with crab stuffing - 2.5 syns, Mullerlight, Packet of fridge raiders - 4 syns

Snacks - Melon and Grapes and the rest of the fridge raiders. Mini snickers - 5 syns, 8 bubblegum fizzy sweets -4 syns

Tea - Jacket Potato, Sausage surprise and 42g cathedral city low fat cheese.

Well no Zumba the class had sold out??? I was pretty annoyed as i really was not feeling it tonight and had rushed around, but oh well, i am going to go friday night instead.

Sausage surprise turned out lovely and although it was just a throw together meal, i really enjoyed it and the recipe will become a regular now.

4 syn free sausage
Red Pepper
2 small red onions
Passata
Tin of chopped Tomatoes
Paprika
Mixed italian herbs
2 teaspoons of cheats chilli
a good slug of red wine vinegar
teaspoon of splenda

Browned the sausages, slices the onions, chopped the red pepper and fryed them. When onions soft add everything else and bring to the boil. I then put it all in a casserole dish uncovered for about an hour on gas mark 4.

I had 2 sausage with Jacket Potato and 42g of low fat cathedral city cheese.
Was really yummy.
I am having the other 2 sausages tomorrow with another jkt for lunch, heated up in microwave at work.

And as there is still loads of sauce left i have put in some pasta twists and going to put in fridge for later in the week.

All in all a success.

i going to give this a try tomorrow night.

Ingredients:
6 eggs
2oz self raising flour
couple drops of vanilla essence
2 tsps baking powder
6 tbsp granulated sweetner
Method
Mix the eggs and sweetner and vanilla essence in a large bowl with electric whisk, beat until it triples in volume (about 10 mins)
Sieve flour and baking powder and fold into mixture.
Share between two sponge tins and bake at 200C for about 11 mins (could be a little bit longer)

4 tsp Hartley's Best damson Jam (All Hartley best flavoured jams are 0.5 per tsp

I cut the cake into 4 and worked it out at 4 syns per wedge - and I mean wedge!!!

Well i tried the sponge last night, it was a diaster. So 6 eggs wasted.
Oh well i would not have known if i did not try.

Wednesday - Green day - working 1pm to 9pm

Breakfast - Mullerlight, 2 slices from a 400g loaf wholemeal, 2 poached eggs.

Snack - Timeout - 4.5syns

Lunch - Cold Tomato Pasta, this was the sauce left over from earlier in the week.

Snacks - Cheese Curlies -3.5 syns

Tea - Jacket Potato with 42g low fat Cathedral City Cheese and Red Onion. Mullerlight.

Snacks - Hobnob -3.5 syns and Caramel Biscuit - 3.5 syns

I having 2 slices a toast in a bit with 2 teaspoons of jam, 1 syn over oh well i will make it up tomorrow.

Good day really but been really hungry and i have munched lots.
Burgers made for tomorrow though so all in all a good day.

1/2 syn on EE

4 TBSP tikka powder
200g pot fat free natural yogurt
salt and freshly ground pepper
700g/1lb 8oz skinless and boneless chicken breast or thigh cut into bite size pieces
low cal cooking spray
1 onion peeled and grated
4 garlic cloves, peeled and crushed
1 red chillo chopped and deseeded
1 tsp group ginger
2 tbsp tomato puree (1 syn)
1 tsp artificial sweetner
5 tbsp fat free natural fromage frais
300g/10.5 oz dried long-grain rice
a handful of coriander, chopped

1: Mix half of the tikka powder with the yoghurt and season well. Place the chicken in a bowl and pour over the tikka yogurt and combine. set aside
2: spray a non-stick pan with low cal cooking spray and fry the onion for 5-6 mins. Add the garlic, chilli, ginger and remaining tikka powder and fry for 2-3 mins. Stir in the tom puree, sweetner and 250ml/8.5 oz of water and bring to the boil. Reduce the heat add the fromage frais and simmer for 12-15 mins, stirring often.
3: Cook the rice according to the packet, drain and keep warm.
4: meanwhile preheat the grill to medium, place the chicken on a grill rack, spray with fry light and grill for 15 mins, turning occasionally until cooked, add the chicken to the sauce.
5: serve sprinkled with coriander, with a tomato salad (sliced tomatoes, mint leaves, chilli power and lemon juice)

I really fancy curry now :)
