Thanks everyone was happy with my loss and it was our taster night yesterday so i'm feeling motivated and with new ideas for things to make! should be running today but I can't carry on with my current trainers, so I'm going to a specialised running shop tomorrow to get some sorted.

What were the magic porridge pancakes like? I've seen a few things on here but have been a bit unsure whether or not to try them as the reviews seem very mixed.

I love them! To me they taste just like those ones you can buy ready made to grill- can't taste the porridge at all! Here is how i do them:
Mix 35g porridge oats with 1 mullerlite (so far i've tried a vanilla version and a toffee one) and leave in the fridge overnight.
The next day, mix in 3 eggs and a tablespoon of sweetener (or to taste) Mix really well so it's all smooth!
Spray a pan with fry light until hot, place in a metal cookie cutter and spoon in the batter- I would say mine are about 1cm thick. When you think it has set, remove the cutter and allow to cook for a couple of minutes. Flip over with a metal spatula and cook the other side. Voila! A good tip is to keep spraying fry light when you flip over or for each pancake..just judge how it's going!
My first one was rubbish but you get used to making them..using the above ingredients, generally that makes 8 pancakes so i share with someone xx

I'd just seen a few people say they were like lumpy omelettes, it put me off a bit lol!
