It has been a long time since you posted.
Good that you are still on plan. It does get frustrating when it's slow but keep chipping away at it and you will be rewarded.

Can't seem to stick to anything. I'm all or nothing.
We are 7 months into the year and would love by Christmas to feel fit and have some energy to do things.
Going to get back on my bike every day even if it's just a ride around the block.
That is good you have done 11 days. I think exercise is the key to keep you on track. Every time I've been out on bike I do feel better for it.
