Kingleds Food Diary - help needed!

Ended up eating the pitta that came with my kebab - but it was 10 syns, so I was still okay.

Brekkie: Pineapple & Kiwi Fruit, 42g All bran (HEB), mullerlight mango & mandarin flavour

Lunch: Homemade Minestrone Soup (carrot, onion, celery, tomato, cannilini beans, pasta) with 42g reduced fat cheese (HEA)

Dinner: Brown Stew Chicken (onions, spring onion, peppers), rice and peas.
 
Baking Time!! Trying out some low syn Xmas recipes
Yesterday i made the chocolate truffle recipe from the christmas cook book (VERY RICH). Today my 1/2 syn stuffing balls are already in the oven, then my gingerbread men are going in. Have a taster session at group tomorrow so I am going to use my group as guinea pigs :)

Food Plan is as follows
Brekkie: Baked Eggs with tomatoes & mushrooms

Lunch: Homemade minestrone soup (carrots ,celery, tomato, onion, pasta, cannilini beans)

Dinner: Chicken, spinach & potato curry (spinach, onions, garlic, tomatoes, chicken, potato)

Snack: 2 small slice wm bread with 42g cheese (HEA & HEB) with pickle.
 
I did. It wasn't pretty. 2lbs on.

The truffles went down really well.

Have spent today Xmas shopping - now all done thankfully.
 
Class on Xmas eve & new years eve! It was bedlam - and i had a hangover too - not the best idea but at least it's all done now!

Back on track tomorrow! Aside from Thursday I should be able to stick to plan till xmas now. Need to make sure I don't have a massive gain to start the new year

Very easy!! Otherwise i would have failed MISERABLY :)
Heat, but don't boil,127ml of elmlea double light cream - take off the heat
Mix in 255g of dark chocolate and melt. Best to either grate or cut up really small before hand
Transfer to a bowl and then add 2tblspns of your fav liqueur (I used Baileys)
Put in the fridge to set for a couple of hours - it needs to be soft enough for you to mould but not soft enough that it sticks to your hands!
Put 2 tblespns of cocoa powder on a plate, dust you hands with cocoa powder and take 1/2 teaspoon balls, roll in your hand so they are covered in the powder.

When they are all done (makes about 25-30) dust with icing sugar.

Lunch - was out with a customer. Had a grilled chicken breast with green beans and sweet potato mash. Had a chilli jam with it. I doubt the meal wazs free, but it was probably the best thing on the menu.

Dinner: Spag Bol, made with peppers, onions, tomatoes, served with 42g reduced fat cheese (HEA)

Brekkie: Pineapple, Strawberry & Raspberries, with 42g all bran (HEB) and fat free yogurt

Lunch: Baked Eggs with tomatoes, mushrooms & baked beans

Dinner: Spicy Chicken Pasta Bake with 42g cheese (HEA)
 
Slight edit to this evening meal. We're having lemon & thyme roast chicken with rosemary & garlic potatoes, carrots, brocolli & cauliflower.

Cue husband already searching out the take away menu as Sarah attempts a recipe she's never done before!
 
Hmm, so lemon & thyme chicken was not a total disaster - ended up adding a bit of sugar to the sauce as it was a bit sour, but no take away in sight! So syns for yesterday were. 2 syn for sugar, 3 syns for olive oil on the potatoes (12 sprays of the Bertolli Olive Oil Spray), and a few more for some Thorntons chocolate :sign0007:

Food for today will be:
Brekkie: Strawberries, Raspberries, Pineapple, Kiwi Fruit, with 42g All bran and Fat Free Yogurt

Lunch: HM Med Veg Soup (onions, garlic, carrot, celery, tomato, peppers, potatoes), with a couple of ryvita (3 syns) for dipping.

Dinner: Spaghetti Bolognese, made with ex lean mince, peppers, onions, tomatoes. Served with 42g reduced fat cheese (HEA)
