Thanks Kittykat, how are you getting on? You've done brilliantly.

Anyway........... I've been travelling all day today 400 miles in total so am knackered now.

My day

B: 3 egg omlette on toast (1B)
S: 2 bananas, 1 apple and grapes
L: **BUFFET** 2 prawns, 1 tiny egg triangle sandwich and a banana (counting as 1B as the bread was only 1/2 slice plus prawns)
S: Hifi bar (6 syns) and banana
D: Roast potatoes, parsnips, sweetcorn and mushy peas (free)

I'm really glad I've managed to be good on my first day as I know I will use it as a building block now.

The knee is still sore but not getting any worse so that's good. I keep forgetting that I am not supposed to step down off the train right foot first, so we get into a station where there is a 2ft step down off the train and what do I do? Right foot first! That kinda hurts!

I can't wait to go home and make cous cous cake tonight.

I'm making a batch of my Rocky Road too. My collegue is leaving tomorrow so I'm giving it to him as a leaving present.

I'll make the cous cous cake first so I can shovel it in my mouth whilst handling the butter / chocolate / biscuits / syrup / marshmallow etc. Hehe.

I'm also making a big batch of veg chilli, so think I'll be in the kitchen ALL night. x

How do you make your veg chilli.
 
Veg Chilli (it rocks).

You will need:

* Courgette
* Peppers
* Mushrooms
* 1 tin Kidney beans
* 1 tin Butter beans
* Two tins tomatoes
* Fresh chilli or chilli powder

Slice / dice the peppers and courgette and add to a wok or sauce pan. Add in the chilli powder or diced fresh chilli and fry for a few minutes. This gets the flavour out of the chilli.

Add the mushrooms or anything else you want to put in, stir around and add some dried mixed herbs.

Throw in 2 tins of tomatoes and the kidney beans, reduce the heat and simmer for a good 20 mins.

This thickens it up and makes it taste yum. Add the butter beans towards the end of cooking otherwise they tend to break up.

If you've not tried butter beans - try them, they are gorgeous (well for a bean anyway).

I serve with rice or jacket potato. Yum! x
