Late lunch

Mama's american spaghetti and turkey meatballs!

I made the meatballs with turkey mince and cooked them in the Airfryer so that we're really low in fat. They came out nice.

This recipe makes approx 30 meatballs which was enough for 5-6 dinners


For meatballs

Turkey mince approx 400g
Parmesan 28g or low fat mature cheddar 28g
flat leaf parsley, finely chopped
Salt
Pepper
Cayenne pepper, half tsp
Garlic minced

For sauce

Passata
Onions
Garlic
Oregano
Fresh tomatoes

Fry onions and garlic
Add passata
Add a handful of chopped tomatoes for texture
Simmer for as long as you have (the longer the better!)

Mix meatball ingredients together.
Fry a test piece, taste and adjust seasoning
Shape into approx 30 mini balls and 'fry' in Airfryer, oven or pan
Add meat balls to sauce
Simmer for approx 20 mins

Eat baby!!!!!!

I did take a picture on my phone will have to figure out how to get it on here from the laptop !!!!

This used to be my specialty before SW. I havent found a way to do it syn free yet (actually i havent looked lol) but this is a low syn version only because I use less sauce than I used to...lol

I've got one that's based on the whole diet coke chicken thing ,but I have adapted the sauce and make large pots of it and freeze it in portions and it's syn free,but like you I just chuck things in to taste,and it always comes out lovely

This week I am having a 'white meat' week so have made...

Spaghetti and meatballs
Green Chicken in stout with rice and peas and peppers
BBQ chicken, coleslaw and...
No fry fried chicken, chips and salad
chicken caesar salad
Turkey meatloaf, mash and green beans

My aim is to have some themed weeks and see if I lose more weight. Here's hoping...

Fish week

Jerk salmon, rice and peas, spinach (lunch and dinner)
Seafood paella, courgette, peas, carrots, leeks (lunch and dinner)
Sprats and chips (dinner)
Steamed fish, cho cho and okra with green banana (dinner)
Fish finger sandwich and chips (dinner)
Salmon fish cakes, Caesar salad (lunch and dinner)
Salmon and chilli pasta (lunch and dinner)

The no fry chicken, to freeze do I cook it first or batter it up and then freeze?
Also does it matter what flour you use?

Hi vicky and welcome
It's up to you really. Personally, I cook first and then freeze but there's no reason why you can't bread it and freeze from raw.
Use any flour you like. I use rice flour...,
 
Might be an idea to cook it all since il have the oven on anyway, then its a case of defrost and warm through.
