Okra...

Ok, a tip for picking ur okra. Hold one in your hand upside down (thick woody part downwards) and snap the thin top part. If it snaps neatly then it's nice. If not then leave it. The saying is "it breaks, I take!". LOL
The short stubby ones tend to be the nicest... But do the test and see

With yams, if ur buying a big piece then get them to cut both ends and inspect. There's no guarantee it will be perfect inside but at least you've tried.

When cutting it, cut it into pieces say two finger width. Then peel. Cut each round in half, then half, then half again; that should be perfect for saturday soup. Once cut put into cold water to stop it going black.

What part of London are you from mama ?
I used to live in roehampton which was near to Wandsworth,so south west London.
I now live in Suffolk and we have nowhere to buy spices or ethnic vegetables anywhere ,which is a bit of a pain when I see what you ,ermintrude and honeyoc make !!

Tonights dinner

Mama's Rich Jamaican Stewed Steak, rice and broccoli. Flippin Yum!

Now remember, I make up all of these recipes so don't really do measurements but have tried for you guys.

For me, this is about trial and error and personal taste. If youre not a confident cook and you want exact measurements I would advise searching for recipes online...x

Seasoning
Schwartz beef seasoning (I like the Montreal steak seasoning)

Steak
2 packs tesco Stewing steak (cheap cuts are fine) I think it's about 1kg

1 Red pepper
5-6 sprigs of Fresh thyme
3-4tbsps Passata or tinned chopped tomatoes
Scotch bonnet
Scallions or onion
Garlic
Worcester sauce
Beef stock
Soy sauce
Vinegar (any)

Season steak and let marinade for as long as you can
Brown steak in pan and put aside

Fry onions and garlic
Add half of the peppers
Add scotch bonnet to taste.
Add passata
Fry for a couple more minutes
add steak
Add beef stock just enough to cover
Add thyme
Dash Worcestershire sauce
Dash soy sauce
Dash vinegar
Taste and adjust (add more of above as needed)
Lid on pot

Simmer for 1.5-2hrs or on high in slow cooker
For crunch, add remaining red pepper about 10-15 mins before the end.

You can also add in some tinned beans (black eye, cannelini, butter beans) and that makes the sauce thicker and yummier. Add these in about half way through cooking.

I think that's it... Enjoy
