Mama's Meals

Afternoon all!

Well, I have a bad cold but have still had to do my cooking for the week. Have taken some photos for you all... Hope you enjoy x x
 
Mama's Jerk Chicken

Right...

Chicken (say 1 pack of thighs and legs mixed- tescos or sainsburys do them)

Marinade
1tbsp Jerk seasoning (wet) dunns river or walkerswood
1tsp Ground pimento
Salt
Black pepper
2-3 sprigs Fresh thyme
6-7 pimento seeds (optional)
Garlic (fresh or powered)
Fresh coriander
Soy sauce

Honey or sweet chilli sauce

Marinade chicken overnight

Slam in oven, covered in foil (completely sealed). I have fan oven at 150 for 1hr.

Brush with honey and put back in the oven for last 10-20mins at 200.

Done!

Mama that is such a good idea to cook in bulk for the week.
I wish I could do that but ,but I have 4kids (the eldest is 21,and the youngest is 4),and there is no way I could just get on and do it without one of the younger 3 wanting something !!
But might get myself organised and try it for next week it would save so much time .
As usuall it all looks great, have you already posted the recipe for the jerk chicken ?

Will post recipes tomorrow when I'm on the computer. I find it hard doing it on the iPhone...

I started doing this style of cooking about 6months ago when juggling work and a healthy diet was becoming difficult. I get the food shop delivered on a Friday or saturday, season all of my meat and have everythig ready in the fridge (onions sliced, things defrosting etc.), then I wake up very early on a Sunday morning (anywhere from 6am) and begin cookig. Mister Mama occupys Mia and I just focus and get it all done; usually by 10-ish. The key is to have as many things on at once and fill the oven.

I think it's worth the effort as I don't have to do much all week other than maybe prepare some accompaniments.

I swear by it. Let me know if you want some time saving tips... I'm a bit of an expert!

Am updating the recipes as I go along so go back for reference. Sorry they're not perfect but hopefully you are all established cooks enough to get my jist.

Curry chicken

Chicken
1 pack thighs and legs (tecos or sainsburys)

marinade/ seasoning
All purpose
Good quality curry powder (I use Bols, will post a picture)
garlic

Onion
Garlic
1 Tomato chopped
3-4 tbsps Passata or tinned toms (any)
Potatoes or beans (whatever you prefer)
If potato chop into 8ths
Dash Vinegar
Fresh thyme
Black pepper
Small slice of Scotch bonnet
Chicken stock (liquid or 1 cube mixed with about 400ml water)

Directions
Season chicken and put aside (I use food bags, less mess!). Don't be too heavy with the seasoning as this is a light curry, not like an Indian curry.

Fry onion and garlic
Add bell peppers if you want them
Add scotch bonnet
Fry
add passata
Fry off (med heat)
Add chicken (raw although you can brown it if you want to)
Add stock/water to about half way up chicken (LOL, oh you know what I mean..)
Add fresh tomato
Add thyme
Dash vinegar
Black pepper
Taste and adjust

Add potato or beans as preferred

Simmer for about 30 mins and check. If sauce is watery then mash some of the beans or potato with the back of a spoon to thicken.

Or you can do this is your slow cooker for about 2hrs-ish on low. If so, add potato in at the beginning and tinned beans about half way through.

Done!

Add beans to rice and amount of water necessary to cook (I cant cook rice so have a rice cooker! LOL)

For heat- Small slice scotch bonnet (green one) or for aromatic 1 whole un-pierced green scotch bonnet
6-7 pimento seeds
Salt
Black pepper
Scallion (optional)

Cook rice

Done!

Lol...I can't cook rice either! I have a rice cooker and it's brilliant. My rice and peas is very similar to yours but I don't use pimento seeds or scotch bonnet as they give my husband hiccups. :D I use kidney beans in mine and I also use coconut milk too. Usually I just have a small amount or if I have some boiled rice I use that for myself instead.

Poor hubby!

Some people have found a low fat coconut milk/cream that they use and say it works well. I think it's called kara or kala...?

I am not fussed with it so don't bother. I think my meats are so rich that, deep
down, I know that my heart can't take much more flavour (LOL).

I do love gungo peas and have them most weeks; thought I'd mix it up this week.

Because I am wheat intolerant I eat rice like it's going out of fashion; so i have to try different things so that i dont get bored...
