MiM's & flaxseed recipes

I made my first MIM yesterday just the normal one with cinnamon, it was nice but just a bit dry so i cut it up and dipped it in cream and it was lovely. Got some Cocoa so going to try the chocolate one tonight :)

Also got lots more will power now cause my Boyfriend just told me he is taking me to Vegas for my 21st in September so even more reason to stick to it so i can get into some lovely dresses :D
 
How many MIMs do you generally have a day? I had one this morning made into toast with pate but quite fancy a choccy one for supper..................
 
i could eat 2 in one day easily!!!

i do though try to limit it to one....

savoury for brekkie or indulgence, cinnamon and cream for pudding,

as long as you count the carbs and your within your allowance you can have 2, no problem x
 
Ta for that, I wondered if there was any other reason besides the carbs whether you could have more than one if necessary. Although think it is a bit late now to start making one, will have a decaf instead and another pint of water :D
 
Made a garlic bread MIM tonight. Got from Tescos some individual pots of Dairymaid Garlic Butter. Made a Mim and spread on while it was still hot. Would have probably tasted better toasted first but was still very nice garlic bread x
 
Another MIM idea (will get same responses as Marmite I think as whether you love or hate it) but I've just had MIM toast and dripping! Yum!...... Waiting for all the EEEWWWW's now lol x

No it didn't really but think if I watered the mim down a little and toasted it a bit more it might be nice. Was still a bit too cakey when I had it but you get the idea with the taste x
 
ALMOST SINFUL RICH CHOCOLATE MIM DESSERT

When you crave something really special yet don't want to stray, try this. Makes FOUR generous muffin-sized cakes.

Half cup Flaxmeal
Quarter cup Ground Almonds
Quarter cup Soya flour or Oat flour
Splenda to taste (don't skimp)
Generous amount cocoa powder
2 heaped TSP baking powder
Pinch of salt
2 Eggs, beaten in at least one cup water
Dash vanilla flavouring
1 TBSP oil
1 TBSP cream if wished.

Make in the manner of a regular MIM. When cool, cut in half and fill with vanilla cream cheese frosting (cream cheese, vanilla flavouring, powdered Splenda).

Put in a dish and cover with single cream - not too much. ENJOY!

UTTER BLISS and seems almost like cheating, but isn't! Not suitable for Induction but fine for those on the nut rung of OWL.

Don't have exact carb count cos measurements will vary but mmmmm

It is! And the addition of ground almonds/soy/oat flour gives a completely different texture. I think that, over time, we need 'treats' on Atkins. Sometimes a mealbar just doesn't hit the spot. This dessert totally does! It felt like sheer decadence when I ate it x
 
Burger Buns

BURGER BUNS

2 tablespoons butter
Pinch salt
1/4 cup flax meal
1 egg
1/2 teaspoon baking powder


Use a microwaveable bowl that resembles the size a burger would be , microwave the butter to melt it. Stir in the salt and flax meal. Beat in the egg with a fork until well-blended. Beat in the baking powder. Scrape down the sides of the bowl with a rubber spatula. Microwave on HIGH 1 minute, or until puffed and set in the center. Let stand 1 minute; remove from the bowl and let cool on a rack. Slice in half and use as a burger bun.

Makes 1 serving
Can be frozen


I had these for breakfast this morning toasted with butter on with fried bacon....delicious :)
 
Dr Atkins Fromage Burgers

2lb minced beef
1 tbsp each of fresh chives, tarragon and parsley
2 teaspoons salt
1oz spring onion finely chopped
1 small tomato finely chopped
1 egg beaten
6oz cheddar cheese
1 and a 1/2 oz butter

Combine the beef, chives, tarragon, parsley, salt, spring onions and tomatos and egg and mix well.
Shape into 12 equal sized balls then flatten to make thin discs.
Divide the cheese into 6 piles and press each pile of cheese together.
Place 1 pile of the cheese in the centre of 6 of the meat discs.
Place the second burger discs on top and press the edges together to seal them.
Saute the burgers in a non stick frying pan for 5-6 minutes on each side.

Atkins Style Cream Tea

Make up a cinnamon MIM, slice into 1.5cm slices (I got 4 slices). Squash and spread a juicy raspberry on top and a dollop of thick cream. YUM - I could only eat 2 so I reckon 2 carbs??
 
Lots of lovely ideas since the last time i was on. Think i'll make one now.
