Moonlights' (temporary) Maintenance

Aww glad the cheesecakes were enjoyed! I'm going to try versions with some different flavoring essences in eventually. Really does just taste like cheesecake.

Tuna fishcakes weren't great which is why I didn't give a proper recipe. I enjoyed the base mix I tasted before I added the egg more than the final thing, so I won't make them again but may use the mix of tuna, spring onion and cheese to make tuna mayo.

And courgettes used to be something I hated too! I've only started liking them in the last couple of years. Cutting and salting them before cooking really helps take any bitter taste out.


Well, today I survived lunch in a restaurant where I had to watch everyone eat their chips and have (delicious) churros for dessert (I have dreams about those churros they're so good) while I nursed a cup of tea.

Did it, though.

My salad did come dressed. It didn't taste like it was sweet but I shall be amazingly pissed off if it was and I'm out of K with no churros to show for it - will check in the morning.

Made myself an attempt at choc brownies to compensate - bitter and not very nice so no recipe but basically egg, almond flour, cream cheese, sweetener.

Food:

Experimental low carb chic brownie
Cream

Lean rump steak
Salad (salad leaves, tomato, cucumber, mystery dressing)
Mayo

20g Edam

Yes, very well done for saying no to chips - and dessert!

With restaurant salads, I just ask for them to be undressed or to pour some oil over - but am sure you will be fine :)

It was a very nice salad I must say. The dressing seemed mayoey and must have been as I'm still comfortably in K.

Right, off for hospital appointments for the afternoon.

Zoodles with blue cheese sauce were delish. Way way low on fat quota today though.

Hi moonlights, hope you're recovering from yesterday :)

Just thought I'd mention that I made your almond bread this morning for breakfast (thought it would be appropriate for an Up day because of the calories) and it's really good! I haven't had anything remotely bread-y since last November, so it made a lovely change. I think I overcooked it a little as it came out very slightly rubbery - microwaves vary so much - but it was still very good with a nice slathering of Philly on it :D. And you're right about it being filling; I've only eaten half of it so far, and I'm pretty full!

So thank you for that - you're a star! :D
 
Yay glad you liked it! I really was impressed with how like white bread it turns out - definitely the closest thing I've had while on low carb and it was just a late night whim to give it a try.

You could also try adding a couple of tbsp of water - I did that last time and I think it made it a little lighter.

And zoodles! I've even got my mum making them now. Crazily enough a whole plate with 50g soft cheese and 30g Stilton making a really rich sauce was only about 300 cals.

(as to the figures there - 1200ish was how much I ate yesterday, 1750 is what mfp tells me I can eat and lose a 1/2lb a week so I set it to that as a rough guide)

I think the biggest surprise about the almond bread was how much it doesn't taste of almonds - I really expected it to. Now I'm wondering what a sweetened version with a bit of flavouring would be like, some cinnamon or mixed spice or something. I love sweetened, spicy breads (too much!) so I may try it.

I had about five of them yesterday on my DD - they make a really delish soup!

I've been thinking about making a sweet one myself - I'd just add tablet sweeteners dissolved in a tbsp of water and a flavoring essence to start with - I think adding cream would make it more cakey, and spices are a nice idea, too. I love ginger breads and hot cross bun type spices.

Was looking at your soup recipe Susie, thinking it might be nice with some cream cheese or maybe Boursin mixed in. What's a herb infusion pot?

It is! My mothers friend does a mean courgette and chocolate cake. The veggie innards make it really moist.

Well, didn't end up eating much today as I fell asleep too early, and I'm low on fats again, oops.

Also made cheesecake cupcakes but I don't think I cooked them long enough, texture was funny, so I chucked 2/3rds of the batch away. I'll do a no-bake version once I get more cream cheese in...

So that's erm. 5g of non medicinal carbs today. I'd been planning on cauli cheese for tea which would have bumped it right up.

Think I'm in one of those little phases where nothing tastes quite right.
