On my holiday and trying to spend more time in bed. Hahah - truth is I was sleeping all day yesterday
Doing well with my eating so far. Had some nice steak at saturday
Overnight in slow cooker cooked breakfast ( and lunch
) eggs with veggies and cottage cheese
Pasta in home made spice tomato sauce
And lunch today - Borš
Promise to write down how to do borš and here I am

hour to make from start to end.
What you need;
Onions
Garlic
Carrots
Cabbage red and white
Beetroot
Potatoes
Stock cubs, salt, pepper, fry light, sweetener, vinegar, bay leaf.
For serving
Cream fraiche, fresh coriander or parsley or dill.
Start pealing carrots and onions and garlic. Cut them as you like but I cut julienne (strips).
Put all on pan add fry light and cook carrots, garlic and onion few minute.
Cut both cabbages and add to carrots and onions. Fry about 5 more minute until they change in color.
Until everything is on pan peel beetroot and cut juiennes
By this time your carrots and cabbage should be ready. I use different pot for boiling soup. So I put my carrots and cabbage in there and add water, 2 stock cubs, salt, pepper, bey leaf. I put pot on high heat until water starts boiling , then i turn heat off and keep cooking slowly.
Same time fry beetroot separately. Thing why you need fry beetroot is because - if you dont fry beetroot it will lose its color. You will need fry beetroot until color turns dark red.
Same time peel and cut some potatoes and add them to pot with carrots and cabbage.
Now comes the vinegar and sweetener part. I add about 2 spoonful of vinegar ( one at the time ) and about 2 spoonful of sweetener. You will have to taste it at this point. Sweetener will take away sour taste of vinegar but vinegar is the reason why soup saves the color and taste. Now add beetroot. Soup turns dark red. I added 2 more stock cubs to give my soup more taste and some salt.
Soup is ready when potatoes are soft. There will be foam on soup. Remove it.
About 15 min boiling and soup should be ready. Taste it. If needed add what is missing.
If you like -'you can blend soup but remove bay leaf first. I didnt
Serve with cream fraice ( 1 syn for tbsp , sainsburys reduced fat one ) and fresh coriander.
