You asked me for the recipe for CAULIFLOWER CHEESE SOUP. I got it from the recipe thread on here but changed it to loose the points for olive oil. I found it tasted better when it was reheated than it did when it was just cooked.
1 cauliflower
1 onion, finely chopped
1 clove garlic, crushed
100g Extra Low Fat soft cheese (I used Tesco light choice garlic & herb)
2 vegetable stock cubes
½ pint skimmed milk
½ pint water
chopped parsley
Fry onion and garlic in fry lite until soft, but do not brown, add cauliflower and a drop of water and soften with the lid on for 5 minutes, stirring occasionally to stop sticking. Stir in cheese, milk and water a little at a time. Sprinkle in stock cubes, simmer for 20 – 30 minutes until cauliflower is very soft and breaking down, season to taste.
Add more water if needed.
Blend and add parsley.

Hiya, thanks for this, just made it and it was lovely. How many servings would you say this portion makes? I notice you give it 1 point everytime you eat it but that's not for all this surely??
