Hi i also am single. My son eats a small portion but i find i cope ok. Eg steak a small single one, Asda do mini fillets of chicken and as for mince i rarely use but if so use things for meatballs then snack on them or take for lunch. My recipes tend to be spicy as i use less meat more spices but they r nice. Things like salmon just get individual portions xx
 
Here's the recipe for the pork chops if anyone is interested.

Bonless pork loin chops (visible fat removed)
1 apple, peeled and diced finely
1 tbsp honey dijon mustard (I like the kind with the bits in it)
Chicken stock

Season pork chops as you like. I put garlic, onion powder, black pepper and salt on mine.

Heat pan over medium heat. Spray with frylite. Add pork chops and cook on both sides - do not overcook as they will get dry and tough!

Remove pork chops and put on a plate. Cover with foil until ready to serve. In the meantime, put a splash of chicken stock in the pan that you cooked the pork in. Give a good whisk or stir to losen the lovely dark bits at the bottom of the pan. (If you have burned your pork chops, don't bother doing this!) You want that caramel color stuff that's leftover. Add you chopped apple and stir until they start to soften. Add honey mustard and mix together. Sprinkle with a little sweetener (maybe 1/2 tsp) and remove from heat. Serve pork chops with the apple mixture on top! Easy and delicious. Dinner was ready in less than 20 min!

Here are pics of Gingerbread men..cant remember what book but they were quite hard anyways lol... next was chocolate brownies with nuts on the top... needless to say they didnt taste of much lmao!.. then fruit pavlova! with melted chocolate on top..and the final pic is diet coke chicken with rice.. didnt eat the pitta there was too much food! lol

just have just got to say mmmmmmm , were you aware that many of us off the 'Total food replacement diets ' pages come over here to drool at all the yummy pictures of food ( food porn we call it ) ??? I am now 14 lb from my target weight and will soon be moving onto SW to maintain my weight and this thread is like looking at the future of my plates .... mmmmm :D

I second this! This is my favourite thread! I'm on food replacement diet and plan to be for several more months. As soon as I'm cooking and eating again I'll be posting here (and 'borrowing' your great ideas!)

The pavlova recipe was from a free hand out book I got from group one day in connection with Mullerlight yogurts and was called 'Just Desserts'

The recipe goes:
4 egg whites
A pinch of sale
142g caster sugar (i used sweetner instead, like 5tbs)
1 level tsp cornflour
1tsp raspberry vingear.. (i didnt have any just used malt)
100g quark
190g pot of either raspberry and cranberry or vanilla mullerlight (i used vanilla)
2 tbsp art sweetner
340g mixed berries
28g each of white and dark chocolate

Preheat the oven to 160/gas 3. Whisk the egg whites and salt with an electric whisk until softly peaked. Continuing to whisk slowly add the sugar until glossy then add the cornflour and vingear then spoon onto baking parchment.
Place in oven immediately reduce the heat to 140/gas1 and bake for about 1hr or until crisp to touch. Allow to cool and peel off the paper.

Beat the quark, yogurt and 2tbsp sweetner together and spoon over the meringue nd top with the berries. Melt the chocolate in two bowls either over simmering water or in the microwave and drizzlle over te pavlova.

As I didnt use sugar I only syned the chocolate and corn flour which made it 15.5syns for the whole thing. I think if i made it again I wouldnt have used as much chocolate probably just one lot of 28g but it does say to serve 8 people so that makes it just under 2 syns a serving x

Red Day: Prawns in a spicy garlic tomato sauce using 1tbsp sacla sundried pesto (2.5 syns) served with 35g wholemeal spaghetti with salad and broccoli - very tasty.
