Stuffed Romano peppers with puy lentils and grilled Greek cheese ( like halloumi but called Greek grilling cheese in supermarkets) sweetcorn peas carrots and beans, salmon with chilli BBQ sauce.
Wouldn't buy asda frozen salmon again. Tasteless and dry as cardboard.

Pete’s Slow-Pot Sausage & Beans


Serves 4

Ingredients

4 Sainsbury’s “Be good to yourself” extra lean Cumberland Sausage
400g Baked Beans
400g Cannellini Beans, rinse in hot water
400g Borlotti Beans, rinse in hot water
400g Chopped Tomato’s
500mL Knorr Rich Beef Stock-Pot Stock
1 large onion
4 slices smoked bacon, finely cut into strips
1tsp dried thyme
1tsp paprika
1 chilli, deseeded and chopped finely
Splash of light soy sauce
Splash of Worcester Sauce

Method

Spray a frying pan with Fry Light and cook the onion, chilli & bacon with the sausage until cooked.

Switch the Slow-Pot to “high” and add the beans, add the Worcester sauce, soy sauce, thyme, paprika & 250mL of the stock.

Cut the sausage into 16 pieces and add to the Stock-Pot with the other frying pan ingredients.

Bring to a boil and add extra stock to cover the ingredients and then turn the heat to ”low”

Sounds nice, but is a slow-pot the same as a slow cooker?

Thanks , I use a chip cutter( lethal device where you put the potato in and break your wrist trying to push the lever down lol) they come out like French fries then I use an actifry and fry light. Well worth the effort

Yes, a slow-pot is the same as a slow cooker! we have both! one is small and round the other is oblong and much larger, hence the name!

Pete’s Sloppy Joes

Serves 2
Ingredients
250g Low Fat Mince Beef
1 Onion, finely chopped
1 Garlic, finely chopped
250mL Passata
1 Pepper, chopped
1 Tbsp. Sweetener
1 Tbsp. Worcester sauce
1 Tbsp. Apple Vinegar
1 Tsp mixed herbs
1 Tsp Paprika
1 Tsp Mustard
Wholemeal Baps 3.5Syn or 1xheb each

Method

In a heavy frying pan brown the mince in small batches by cooking at a high heat and allow to brown before disturbing, set aside.

Add fry Light to the pan and cook the onion, pepper & garlic for 5 mins or until transparent.

Return the mince to the pan and add the Passata, sweetener, Worcester sauce, mustard, vinegar, mixed herbs & Paprika. Mix well and allow to fully cook, adding seasoning to taste, serve in a toasted wholemeal Bap.

Hey cg if you want an actifry Argos have them on special offer at moment but they are still cheaper on eBay. I got a really good one for £30 . I did a local search and collected it from just a few miles away x
 
I made my garlic chicken & roast vegetable lasagne last night and it was soooo good! Recipe is on page 8 of the recipe thread. This time I used half cheddar and half parmesan - yum!!! Worked out to be 1/2 HEX A and 1/2 HEX B, and 1.5 syns as it was too much for me to eat half of the whole lasagne!

Can I get the recipe for that please Stacey? It looks absolutely divine!!

YUM! Recipe please!!!!! :D

Morrisons sachet of cheese sauce (the green packet! very important because it is only 4 syns for the whole pack and you make it up with boiling water and not milk. Plus its soo tasty!)
42g of RF cheddar per person
Red onion
Sliced tomato
Enough pasta per person (I dont do measuring lol!)

Boil up some pasta, I think its something like 75g of pasta per serving. I just did it by eye!

Drained the pasta and made up the cheese sauce by making it up to a 1/2 pint with boiling water.

Add the pasta to a large bowl, pour the cheese sauce over the pasta. Chop up a red onion and mix it into the pasta mix.

If your making 4 the cheese would be 168g or for two 84g. Put half of your grated cheese in the bowl and mix with the pasta, keep the other half for later.

Give a oven proof dish a spray with frylight and spoon in the pasta mix. Add the sliced toms to the top and then top with the rest of your cheese.

Bung in a hot oven for about 20 mins and your done!

If your serving 4, per serving is 1 HEXA + 1syn
serving 2, per serving is 1 HEXA + 2 syns

I didn't think I would ever like packet cheese sauce but omg.. tastes amazing! Proper mac and cheese!

Last night's Supper..........


Pete’s Chicken Stir-Fry
Serves 2
Ingredients
1 chicken breast per person, cut into strips
1stir-fry veg pack
1x 150g pack Amoy “straight to wok” fine noodles 1.5syn
150g button mushrooms, sliced

Stir-fry sauce

1Tbsp. sweetener
1Tbsp light soy sauce
1 tsp blue dragon oyster oil 1syn
1 tsp toasted sesame oil 2syn
1 spring onion, finely chopped
1 garlic clove, finely chopped
1 cube of ginger, finely chopped
3 Tbsp. water

Method

Spray a wok with Fry Light and cook the chicken strips until cooked and browned, remove from the pan, add more Fry Light and cook the veg for 5 mins, return the chicken to the pan, add the noodles and the home made stir-fry sauce, cook for another 5 mins until the noodles are cooked.

Making the Stir-fry Sauce

In a small frying pan, add the ingredients and over a low heat, cook, stirring from time to time to blend, season with salt & pepper. Cook until it thickens then add to the stir-fry after the noodles,

I think I will try this, I have been making a SW mac n cheese but syn wise this is much the same and I'm sure tastes better. Do u know of any other supermarket low syn cheese sauces? You don't get Morrisons in Belfast :-( x x
