Last night was weigh-in so raided the fridge for something light! found 1/2 pack of mushrooms and a few chicken pieces in the freezer so I think I should have called this "leftover soup".............
Pete’s Chicken & Mushroom Soup
Serves 2
Ingredients
450mL Hot vegetable stock
200g Mushrooms, chopped finely
100g Pre-cooked Chicken, cut into small pieces
1tbsp Worcester Sauce
1 onion, chopped finely
1 celery stick, chopped finely
1 garlic clove, chopped finely
1 tsp mixed herbs
Method
Spray a saucepan with Fry light and add the onion, carrot & celery and “sweat” for 5 mins.
Add mushrooms, herbs & Worcester Sauce and cook for a few minutes then add the hot stock, herbs, and bring to the boil then reduce the heat and simmer for 15 mins.
Remove from the heat and part liquidise, leaving small pieces of mushroom, with a hand blender, add the chicken and cook for a further 10-15 mins to ensure the chicken is hot.
Doesn't look to nice but oh! it was nice! must have worked as I lost 3lbs and was SOTW again!
