Corned Beef & Mash Pie


Pete’s Corned Beef & Mash Pie

Serves 2
Ingredients
1 200g Princes Low Fat Corned Beef (4.5syns per tin in total, 2.25syn per person)
1 Large Potato
1tsp mustard powder
56g Low fat Cheddar (1Hea per person)
* option (1tbsp brown sauce, 1 syn)

Method

Open the tin of Corned Beef and tip into a mixing bowl, break into small pieces.
In the meantime boil the potato, then mash and mix with the corned beef, add the mustard and fill an oven-proof dish, grate 56g of low fat cheddar cheese and cook at 180c until the cheese melts, served with an egg and baked beans. Served with *option, brown sauce.

Just made a pasta n sauce and added 2 ww sausages some frozen beans and some broccoli was very yum and quick x

Thanks Jo!! Been reading through lots of the posts and they are so helpful! I'm looking forward to trying out lots of new food and making some new friends who can keep me on the straight and narrow :)

PLUS i work in a male dominated environment and on the road where we work there is a pizza hut, KFC AND a Mcdonalds :eek: so the ideas for lunch that are filling and that can be made the day before/morning are a MUST, lets say the guys I work with aren't exactly the most supportive:rolleyes:

It was really good! Toasted and sweet at the same time. I've edited the pic to include the recipe.
 
OMG just had an absolute MARE with mung bean wraps. . . . well actuallly I have a LACK of them.

Soaked them overnight as the recipe suggests. . . but they were still hard, thought to myself "oooh ill use my hand blender to make them into the paste.." went to do it and blummin' beans went flying everywhere, just got changed out my PJ's and about 20 fell out hahahaha.

Please can someone help me out. . . do you have to soak them at a specific temperature or in hot water?

I'm sure I should be blonde *rolls eyes* :)

I soaked mine for at least 24 hrs, better 48hrs! use cold water and change it several times.

Chicken tikka masala
Serves 4

681g Chicken thighs or breasts
4 TBSP tikka powder
200g Low fat yog
250ml chicken stock
Salt & pepper
1 Onion
4 Garlic cloves
1 red chilli
A handful of corriander
Frylight
1 TSP of ground ginger
2 TBSP of tomato puree
1 TSP sweetener
5 TBSP low fat fromai frai

1) Chop the chicken. Mix 1/2 the tikka powder with the yogurt, season well & pour over the chopped chicken. Cover and put in the fridge.
2) Grate the onion, crush the garlic, chop your chilli and corriander
3) Spray pan with frylight, fry the onion. After a few minutes add in the garlic, chilli, ginger and the rest of the tikka powder.
4) Cook for 2-3 minutes then stir in your tom puree, sweetener and add in your chicken stock.
5) Bring to the boil, reduce the heat and add the fromais frai. Simmer for 15 mins stirring often.
6) Take the chicken from the fridge and grill until fully cooked.
7) Add to the sauce, cook for a further few minutes on a low heat then divide between bowls and sprinkle with corriander.
 
Owww errrr mung bean wrap sounds odd but I will have to have a go good take to work food lol
 
Ok thanks guys. . . i'll try them tomorrow. . did anyone else's beans fly around? (LOL) is a hand blender ok to use?

Moong bean Wraps..............


Pete’s Mung Bean Wraps

Ingredients

200g/Cup of Mung/Moong Beans
Makes about 8 wraps
Salt
Method

Soak the beans in cold water for between 12 -24 hrs. Depending whether they are split beans or whole, changing the water at regular intervals, removing any hardened beans.
When ready grind them using a food processer and a small amount of water, adding salt, until you have a mixture similar to a pancake mix but slightly thicker.
Heat a frying pan sprayed with Fry Light until its hot then ladle the mix and smooth out using the base of the ladle to form a thin coating, cook for 3-4 mins and flip over and cook until the other side is done. Use for wraps while still slightly warm to ensure easy folding.

OOF Pete they look delish, wraps are my preferred choice over bread anyway (apart from a nice boiled egg sarnie) and I reaaaaaaaaaally hope mine work. Might have to buy a food processor with the rest of my birthday money. . . .eek!

I love the wraps, they are kinda nutty tasting. When you put the filling in them you dont really taste it x
 
I'm so hoping this time they work, i'm kind of excited to try them yet scared of attack of the mung beans again hahaaha.
 
If you stick them in a blender they won't 'fire' at you haha. Remember to put some salt in them when your whizzing x
