SPICED COURGETTE FRITTERS
*************************

from jan/feb 2012, serves 4, makes 8. 1.5 syns per serving. ready in 15 mins
i halved the whole recipe and we still had 2 large fritters each.

3 courgettes grated or whizzed in blitzer
200g feta cheese crumbled
2 tsp cumin seeds
small handful fresh herbs
1 red chilli deseeded and finely chopped
2 eggs beaten
2 level tbsp self raising flour
salt and pepper

put courgette into a fine sieve and press with back of spoon to extract as much liquid as possible. transfer to a bowl with cumin seeds, feta, chilli, eggs and flour, season and mix well.

either spray a pan with frylight and cook on both sides for 2-3 mins or i used a georgr foreman grilling machine.
 
ALL ABOARD FISH PIE
******************

500G white fish and smoked/dyed fish or salmon . I used 250G cod, 250G smoked dyed haddock

100G small prawns
tub of quark
75g of peas or sweetcorn
4 eggs
400ml fish stock, i used a fish stockpot jelly pot and topped it up with hot water.
(stockpots 2 for £3 at moment in tesco and sainsbury)
4 large potatoes
2 heas of cheese


i wanted a fish pie with a creamy thickish sauce not a runny watery one which ive had before, so i adapted 3 sw recipes to get the right thing.

skin the fish and place in a saucepan add 200ml water and half a fish stockpot. allow to reach the boil and cook gently for 7 mins.
meanwhile peel & dice potatoes and boil.
boil 3 of the 4 eggs.

flake the fish and put into an ovenproof dish, add prawns and sweetcorn/peas.

beat the quark in a bowl with half of remaining fish stockpot, and 200ml hot water and the remaining egg.
add a tablespoon of herbs i used some chopped parsley and some dill. mix well and pour over fish.
season .
mash the potatoes or whisk with an electric hand mixer, i added a butterbud sachet (0.5 syns) and enough water to get a creamy mash then topped fish. i grated 2 heas of cheddar on top and baked gas 6 for 25 mins.

Hi it's very simple. I weighed out some ready rolled puff pastry into 28g which my book tells me is 6 syns. I'm sure they'd work with instant mash pastry but I'd made kids some pies so I had some to use up.

Rolled thinner, then put into Yorkshire pudding tins, sprayed with frylight. I sprayed a pan with frylight and added some sliced cherry tomatoes, some sliced mushrooms and some salt n pepper . When softened I added to the pastry cases and crumbled some mozzarella on top about a desert spoon on each one. Then topped with a couple of pieces if rocket and baked until melted. Well worth the syns
 
Pete’s Diet Coke Boiling Bacon



Piece of boiling bacon (ff)
2 Ltr bottle of Diet Coke
Old saucepan


Cooking with Diet Coke may sound weird but believe me it works.

The Coke appears to draw out all the salt and other ingredients used in preparing the bacon and giving it a dark rich colour and flavour.

Don’t worry about the colour of the cooked Coke, it will look horrible but you will be throwing it away.
Your saucepan will look terrible but it will wash up ok, just don’t use your best pan.

Weight the bacon joint to work out the cooking time.
20 mins per 1lb + 20 mins
Use an old pan if possible as it gets messy
Put joint into pan and cover in Diet Coke

Bring to the boil; keep an eye on it so that it doesn’t boil over, very messy!
Turn down heat and allow to simmer.
Keep the joint covered with coke.

The joint is cooked when you can push a skewer through the thickest part of the joint.
Remove and THROW AWAY the Coke, DO NOT ATTEMPT TO DRINK THE COKE!

Add to drain and cool on a sloping drip tray.

Enjoy!

You will never cook a bacon joint any other way after tasting this……..

sweet potato fritters with lemon & garlic mayo

serves 4. 1.5 syns per serving

652g sweet potato peeled and into chunks
1 red chilli deseeded and chopped
4 spring onions thinly sliced.
2 crushed garlic
1 tsp cumin seeds
handful of fresh coriander chopped
salt and pepper

lemon garlic mayo
***************
6 level tbsp extra light mayo
4 tbsp quark or fromage frais
1 garlic clove crushed
finely grated zest of 1 lemon

boil sweet potato,for 10 mins then drain & mash.stir in chilli, cumin, coriander, garlic, onions, and seasoning.

divide mixture into 12 mounds and shape like burgers. ( i did 24 little bite sized ones)

fry in a frylighted pan over a medium heat for 5-6 mins until browned turning
once.

to make the mayo, add all ingredients and mix well.

Looks great! I love boiled bacon with mash, fresh beetroot and boiled eggs. I usually cover the mash in grated chedder and salad cream but that would be naughty now
 
Pete’s Asian Pork Cakes with Noodles


Serves 2

Ingredients

1 lime, juiced & zested (ss) (ff)
1tbsp sweetener
1 Carrot, finely sliced (s) (sff)
1 tub of salad cress
2 spring onions, finely sliced(s) (sff)
2tbsp light soy sauce
2cm ginger, grated
4 Sainsbury’s “be good to yourself” extra lean Cumberland Sausages 0.5syn each
10cm of cucumber, finely sliced (s) (sff)
100g rice noodles (ff)
Sprinkle of garlic salt
Handful of coriander, chopped

Method

Cut each sausage and tip the meat into a dish, add the grated ginger, sliced spring onion, handful of chopped coriander, zest of the lime, a shake of the garlic salt & mix, wet your hands & form into “burger” size portions.

When ready to cook, place under the grill and cook until browned, turning over several times.

Cook the noodles as per the package instructions. Drain in a sieve & allow to chill.

In a glass salad bowl mix the lime juice, soy sauce & sweetener together then add the noodles, cucumber, carrot, salad cress & spring onion.
Serve with Thai sweet chilli sauce dip.

Pete’s Peanut Curry

(Adopted from Tesco’s real food booklet)

Not suitable for people with nut allergies

Serves 2

Ingredients

150g Pre-cooked chicken (s) (ff)
1 Onion (s) (sff)
1 chilli, deseeded & finely chopped (s) (sff)
1 Pepper, finely chopped (s) (sff)
1 Knorr “herb stockpot”
1tsp cumin
1tsp coriander
1tsp turmeric
1tbsp madras curry powder
1tbsp sweetener
2 Garlic cloves (sff)
2tbsp smooth/crunchy peanut butter 9syns/2=4.5syns each person
2cm piece of ginger, grated
200mL hot water
400g chopped tomatoes (s) (sff)
Handful of coriander

Method

In a frying pan sprayed with Fry Light, cook the chicken until browned, remove and set aside.
Spray the frying pan again with fry Light, cook onion, garlic, ginger & chilli until soft.
Add the cumin, turmeric, curry powder & coriander, cook for 2 minutes then add the chicken, tomatoes & sweetener, cook for 10 mins. Place the stockpot on top of the cooking food and allow to infuse.
Add the peanut butter and the 200mL of water mix well & cook on a medium heat until the chicken is hot, and the sauce has thickened, sprinkle the coriander over the food.
Serve with rice & side salad.
(Finish the meal with chilled melon)
