Tonight I had chicken breast rubbed with herbs & spices & salad!

Last night I had chicken breast & cous cous.

Both very delicious :)

Louisiana Spicy Chicken

Pete’s Louisiana Spicy Chicken & Rice

(Adapted from “Pan-Cooked Chicken Dishes”)


Serves 2

Ingredients

1/2tsp cayenne pepper
1/2 tsp Paprika
1 Onion, finely chopped (s) (sff)
1 Red, green pepper, cut into quarters, deseeded (s) (sff)
1 tsp dried thyme
2 Garlic, finely chopped (sff)
2 chillies, deseeded & finely chopped (s) (sff)
2 tbsp shredded flat leaf parsley
4 Chicken thighs, de-skinned & de-boned cut into chunks (s) (sff)
4 chopped tomatoes (s) (sff)
100g long grain rice (ff)
225mL stock, made from a Knorr “chicken stockpot”
Salt
A few drops of Tabasco

Method

Prepare the chicken & cut into chunks.
In a frying pan, sprayed with Fry Light, cook the chicken, seasoned with salt & cayenne pepper, until browned, removed & set aside.
Add the peppers & onion, cook until soft, remove & set aside, add the rice, chillies, and paprika, cook until the rice is coated with the juices from the pan.
Add the stock & cook for 10 mins, return the chicken, pepper’s & onion add the thyme, tomatoes, & simmer, covered for 20 mins. Sprinkle a few drops of Tabasco & season to taste.
Add the parsley and serve.

I'll be honest it looks great but just isn't pizza tasting enough for me, still tastes too 'potatoey' for my likin .. So I won't be bothering again lol xx
 
Thanks for letting me know - still have smash in cupboard so it may stay ther longer!! Read somewhere that cheese flavour smash is available but haven't seen that in my local tesco xx
 
Pete's Chicken Mexicana

Make this for dinner, served with roasted veg & mash.........


Pete’s Chicken Mexicana


(Adapted from ”Pan-cooked chicken dishes”)


Serves 2

Ingredients

1/2tsp Cayenne Pepper
1 Large Onion, cut into quarters (s) (sff)
1tsp sweet chilli sauce (0.5syn/2=0.25syn per person)
2 Chicken breasts (ff)
2 Garlic Cloves (sff)
2 Sweet peppers, finely sliced (s) (sff)
2 Chillies, deseeded & finely chopped (s) (sff)
2tbsp white wine vinegar
90g low fat cheddar cheese, grated (2xHea/2=1 Hea per person)
125mL passata (s) (sff)
300ml stock using a Knorr “chicken” stockpot
Shake of Salt

Method

In a food processor chop the onion, chillies & garlic to a puree.
Cook the chicken in a frying pan sprayed with Fry Light, cook until browned then removed from the pan and set aside.
In the pan cook the passata, peppers, the puree & stock, season with sweet chilli sauce, white wine vinegar, salt & cayenne pepper, then bring to the boil, reduce the heat to a simmer, return the chicken to the pan, cover, and cook for 20 minutes.
Move the chicken to a plate and add the cheese, cover for 5 mins, allowing the cheese to melt.
In the meantime, increase the heat and reduce the sauce to half the volume.
Plate up, serve with vegetables & cover with the sauce.

Thought id share my fab slimming world fish pie. Have taken to making individual portions as only 2 of us eating tonight-3 portions gone in the freezer-yay! It has cheddar and Parmesan (hex a) on top and syns and a dash of green milk synned-obviously all optional but I had syns to spare! Served with broccoli! Xx
