Ooo yum! How did you do the pulled pork? Any added favours? And how did you do the new York chicken? All looks so good :):thumbup:

Here's the pulled pork recipe, New York to follow xx

PULLED PORK
-------------------

1.5kg boneless pork shoulder. ( I used a 400g pork fillet from asda for £3.40 to try it out so now I'd use a bigger joint)
1 tbsp red chilli flakes
1 tbsp mustard powder
2 tbsp white wine vinegar
Salt & pepper
250ml chicken stock
2 onions sliced
4 garlic cloves finely sliced

Preheat oven to gas 3
Place pork in a roasting dish.
Mix chilli, mustard salt and pepper and rub into meat
Mix vinegar and stock and pour over pork.
Scatter garlic and onion over the top
Cover with a piece of baking paper
Cover dish with foil
Bake for 2hr 30
Uncover and bake for another 45 mins

When cooked, using forks pull the pork into shreds.
Serve with syn free BBQ sauce, coleslaw, a bread roll, sw chips
 
And the chicken -


SYN FREE BBQ SAUCE
- 1 onion
8fl oz passata
1 tsp mild chilli powder
3 tbsp sweetener
4 tbsp balsamic vinegar
1 tbsp Worcestershire sauce
1/2 tsp mustard powder
Salt & pepper

Sauté the chopped onion and add chilli, fry until soft, add other ingredients and simmer for 10 mins then blitz with a blender if you wish or leave as it is.
Serve hot or cold and is freezer friendly.

FOR NEW YORK CHCKEN
I pop my chicken breast into oven for about 8-10 mins then add the slice of bacon over it and a tbsp of sauce, then return to oven for 10 mins then I add more sauce and finally after a few more mins I add 40g reduced cheese and pop back into oven to melt, its gorgeous .

chicken harira soup

serves 4
small bunch coriander leaves and stalks separated
2 garlic cloves crushed
1 tsp ginger paste (lazy ginger)
1 lemon zest and juice
2 tsp ground cumin
2 tsp paprika
250g tomatoes chopped
100g bulgar wheat
800ml chicken stock
250g precooked chicken torn into shreds
100g spinach chopped

spray pan with frylight finely chop coriander stalks add to pan with garlic , ginger and lemon zest fry gently for 2 mins
stir in cumin, paprika and cook for 1 min more
add tomatoes, bulgar wheat and stock,
cover and simmer for 8 min til bulgar wheat is just tender
stir in chicken and spinach, let spinach wilt then tear in the coriander leaves. season and add lemon juice to taste
serve

broad bean asparagus and mint frittata



1 bunch of asparagus trimmed and slit lengthways
300g frozen broad beans
14g fresh mint leaves
60g cheddar cheese (2 hea portions)
5 eggs beaten
salt and pepper.

cook asparagus and broad beans in boiling water for 8 mins, drain
put them into a frylighted pan, add chopped mint, salt and pepper, add grated cheese to eggs and mix then pour into pan. ensure all is covered. cook for 2 mins then place under a grill until risen and browned.

Chicken satay, chicken and veg in black bean sauce, spring roll (4.5 syns) Chinese egg fried rice

How did you make your chicken & veg in black bean sauce? & what syns are in it? Looks lovely all of it does ?

Thank you for the recipes they sound delicious. Am definitely going to be doing these soon. Think the pulled pork will go down well at a dinner party with friends!! :D
