Spaghetti casserole bake with quorn Swedish style meatballs.

Free on a Green Day - nom nom :)

1 pepper (any colour)
1 onion
Garlic (optional)
Black Pepper
1 pack quorn Swedish style meatballs
2 cans of spaghetti in tomato sauce (Heinz etc or any brand)
Cheese (I use 4 x healthy extra servings as the casserole makes 2 good portions so therefore 2 healthy extras per meal, plus makes it extra cheesy)

Fry pepper, onion, garlic, till softened.
Add meatballs for approx 5 mins.
Add both cans of spaghetti, season with black pepper, simmer low heat for approx 10 mins.
Transfer mixture to a casserole dish and top with cheese, bake for approx 20 mins.

Syn free on green day

Ive just started Slimming World, what a great thread!!

Today for Brekkie I had All Bran Red Berry Crunch (HEXB) & Fat Free Strawberry Onken

Lunch I had SW Chips, Egg & Beans - Delicious!!

For dinner I am having Garlic&Herb pasta with Mushrooms, Chicken & Bacon ;

Fresh Egg Linguine - 2 sins (1/2 sin per 28g)
Mushrooms - (Superfree)
Chicken
Bacon
2tbsps French Roule (HEXA)

Egg linguine in boiling water in Micro for 4 minutes
Fry chicken, bacon (fat cut off) and mushrooms in pan with 1 spray fry light.
When cooked add 2 tbsps French roule soft cheese until melted.
Stir into cooked linguine!

It's a potato with lots of cuts,almost through, cooked for five minutes in a microwave, opened out &amp; bacon dropped in, baked in the oven for twenty mins then drop cheese over it and cooked for a further five mins until the cheese melts!

CHILLI PRAWN & MUSHROOM ROMAINE


romaine lettuce leaves
pack of prawns
1 tsp lazy chilli paste
1 tsp lazy ginger
pinch of paprika
pinch of salt
few leaves of coriander
5-6 mushrooms sliced
1 garlic clove
1 small onion
2 crab sticks


fry light a pan, add onion and cook for a few mins then add garlic and mushrooms, stir in ginger and chilli
when mushroms are cooked add prawns salt and paprika,
cook for 2-3 mins and serve with coriander and chopped crab sticks

My dinner was amazing and only 4 syns (can be less) on EE or Green if you use both your HEs as part of the meal. Totally worth it!!

Spicy bean enchilada with refried beans, spicy rice, guacamole and sweetcorn fritters.

HEb: BFree wrap
HEa: reduced fat cheddar or 3 Babybel light (all I had in the fridge!)
Syns
1 tblsp reduced fat sour cream = 1
2 tblsp guacamole = 2 (optional)
1 tblsp Flour in sweetcorn fritters = 0.5 (Made 7 fritters and I had 2)
Spicy rice = 0.5

OMG, sweetcorn fritters!!!!!! I love these...how did you make them? xx
 
They were really nice and it makes loads! The recipe says 2 tsp of flour but I thought it looked a bit wet so added 1tblsp. You could add less egg or more sweetcorn and then less flour if you preferred though :)

2 syns for entire recipe on Green or Extra Easy

Ingredients

2 eggs
2 cups of frozen sweetcorn (defrosted and any water drained)
1 tsp of Thai spice ( I didn't add this as didn't have any and they were fine)
1/2 tsp of chilli powder or 1 small deseeded red chilli finely chopped
1 small shallot, finely chopped
some fresh coriander finely chopped
1 tbsp of juice from a fresh lime
2 tsp of plain flour (2 syns)
2 spring onions
non stick spray
salt and pepper to season

Method

Add all ingredients, except the spring onions to a bowl, and roughly blend using a hand blender.
Spray a skillet or frying pan with non stick spray and spoon some of the mixture on the pan (The mixture should make 6 medium sized fritters in total), flatten out and then flip after a few minutes a you would do to a pancake. Repeat with more mixture, you may want to set your oven to a low heat and place the cooked ones on a baking tray, to keep hot, while you cook the remainder.
