Thanks, i think I am getting there I just have to be very organised which is not always easy for me. I think I am going to do the EE plan for a few weeks until I am used to the diet. Making the Choc bran cake today for Sunday lunch can't wait for that.
 
Dinner tonight was just a basic fish curry and rice but dessert was lovely!! SW friendly pavlova lol.

I used an M&S meringue nest with a dollop of Greek yogurt, honey and a strawberry - 3.5 syns

For tea I had strozapretti pesto rosso! It is so yum and only two syns per portion! Recipe is in the recipe section! xx

I was on a red day so couldnt have rice so i just had tikka chunks, but it did taste lovely :) OH loves it, it's proper man food :p xxx

Have you tried cauli 'rice'? It's GREAT for a red day!

Keema Curry

3 syns for the whole dish!

450g lean minced lamb (I've only found this in Waitrose)
1 large onion, chopped
2 garlic cloves, chopped
2.5cm piece fresh root ginger, peeled and grated
1 fresh green chilli, seeded and finely chopped
2 tbsp Patak tikka masala curry paste (2 syns)*
2 tbsp tomato puree (1 syn)
assorted mix veg to your liking (I used grated carrot, grated courgette, mushrooms and orange pepper)
350ml lamb stock
1 tbsp lemon juice
large handful of roughly chopped coriander
salt & pepper
1 head cauliflower
1 tsp black mustard seeds
1 tsp cumin seeds
2 cardamom pods, lightly crushed

1. Brown the lamb in a large pan without adding any oil. Fry over a medium heat for 5-6 mins until well browned, stirring frequently to break up larger pieces. Remove from the pan and strain into a colander/sieve - set aside.

2. Wipe out the pan and spray with Frylight. When hot, add the onion and cook for 10 mins over a low heat, stirring occasionally, until soft and translucent. Add a little boiling water if it starts to stick to the pan. Add the garlic, ginger, chilli and curry paste and cook for 2 more mins, stirring all the time. Return the meat to the pan, add the tomato puree and vegetables and stir until well mixed.

3. Pour in the stock, stir again, then reduce the heat, cover and simmer gently for 45 mins. Remove the lid and cook for a further 5-10 mins or until the meat is very tender and the sauce is thick.

4. Add the lemon juice and simmer for 3 mins. Stir in most of the coriander, reserving a small amount for garnish. Season to taste with salt & pepper.

For the 'rice':

Grate a cauliflower and put into a microwaveable dish with a lid. Add the mustard & cumin seeds and cardomom pods and some salt & pepper. Cover and microwave for 5 mins. Remove cardomom pods and sprinkle with lemon juice.

*If you're using a lot of vegetables then you may want to add and extra tbsp of curry paste just to boost the flavour.

Wow amazing looking meals Britmum! As usual, of course... Here's what I had for dinner, grilled salmon and what I call my "everything salad" with lettuce, spinach, celery, tomatoes, steamed broccoli, green beans and potatoes. Served with a drizzle of balsamic vinegar.

I thought it was allowed as you only use one tin to make the whole thing so you werent 'over dosing' on it. I think its debatable hun xx

According to Slimming World it isnt allowed anymore, I asked them direct and as they are used as a substitute to flour, you have to count the chickpeas as 5 syns per 28g. Hence why I deleted all chick pea cake recipes from my blog and no longer make them, as I don't want to confuse any new members to slimming world.

But I think if you are just having it occasionally and it doesnt affect your loss then there isn't a problem, however if your weight loss comes to a halt, it is possible you then have to start counting it.

they both look yummy Honeyoc. I could eat salmon everyday. I love it. Keep meaning to buy some Tilapia to try, but have only seen it in big packs, so dont wait to buy a big pack incase I don't like it.

They do yoghurt covered pretzels here in 100 calories pack. OMG they are good and a nice treat in the evening for 5 syns ;)

Covered pretzels are my favourite thing. I made chocolate covered ones with diffrent shape sprinkles on yesterday for my birthday! Not very diet freindly but worth it!
