Saltdog's Magic Shrinking Formula

oven baked red pepper risotto ( serves 4 ) Free on a green day if optional cheese is used as Hex.

300g risotto rice, rinsed
500g veg stock
Half an onion, finely diced , or two spring onions chopped
Tin of tomatoes ( with herbs and garlic, or plain - whatever you prefer )
Two red peppers - halved and sliced
6-8 roquito peppers ( the ones in the jar ), chopped into small pieces - choose the strength you like from mild to hot!
Grated cheese - optional ( will be either HE or syn)
lemon wedge and black pepper to serve

pre heat oven to gm5 / 190 degrees

saute the chopped onion in a little of the veg stock and a spoonful of the liquid from the pepper jar til transparent. Add the rice and cook for a further couple of minutes - add a little more stock if needed just to keep it loose in the pan, not swimming.

remove from the heat and add the sliced fresh peppers, the chopped jar peppers, tinned tomatoes and the rest of the stock. Stir and transfer to an oven proof dish. Cover with foil and place in the pre heated oven.

it takes about 20-25 mins to cook. I usually check at 15 mins and give it a good stir to make sure the rice is well distributed in the stock as it cooks. From then on I just judge how long it will take and keep checking until it is. You should get the same texture as you get from a stove top cooked risotto. If it starts to look a bit dry but the rice isnt cooked just add a little bit more hot water or stock and stir well before returning to the oven. If you overcook it, the same as on the hob method, the rice breaks down and goes a bit stodgy.

when cooked, serve hot. Its the tangyness of the jar peppers that gives it the extra zing, and even using the hot ones doesnt make it too hot as its a relatively small ingredient in amongst the rice and fresh peppers. Add the cheese if you're using it( remember you need to count this as a HEx or syn it ), and/or a squeeze of lemon and black pepper. Serve with a big salad for your 1/3rd super free.


This is an adaptation of a dish I've cooked before. All I've done is omit the frying the onion in a tablespoon of oil and it hasnt made a difference to the taste in my opinion. I think this will be syn free on a green day if you use the cheese as a Hex.

So, where to begin? It's been a tough week and I make no bones about it. My weight loss has suffered because of it. I'm trying to get back in to the right frame of mind but have been finding it tough.

Shortly after my last post I had an appointment with the doctor. I'd been having strange feelings of deja-vu accompanied by horrible nausea and dizziness. I'd put it down to tiredness but my GF talked me in to seeing the doctor. I suppose I wasn't really prepared to be told that I may have epilepsy. Apparently the symptoms I was showing are fairly rare but not unheard of. I am currently under the study period to confirm if I have it or not. I got bloods taken this morning and the doctor has told me to record every episode I have between last week and my next appointment in two weeks time. I've been putting on a brave face at home but I'm actually quite scared about it all.

I didn't really start comfort eating after I was at the doctor but I also stopped thinking about food optimising. Going out drinking on Saturday night probably didn't help either! So I missed my 1 stone goal for Valentine's day. Really disappointed about that because it also makes my next mini-goal that bit harder. I am trying to get back in to the diet now so I weighed myself this morning. I've neither lost nor gained since Tuesday so I'm now officially changing my weigh in day to a Friday. Although this won't change the end result, psychologically it will help keep me motivated since I normally do better through the week than at the weekend.

Needless to say, I also missed Caveman training last night. I have been working out at home as much as I can though. To be honest, that's probably the only thing which has stopped me gaining more. It's helped keep my spirits up though. I feel good after a workout. I just wasn't in teh right frame of mind to do it in a group last night.

So, please forgive my absence. I will try to catch up with as many people as I can over the next few days and try and get myself back on track. After all, I have 19lbs to lose in 6 and a half weeks! I'm not holding out much hope but I can only try my best.

Cheers Steve. That's the idea indeed. I'm still not ready to train with a group though I don't think. The thought of it at the moment is putting me off training altogether. I'm ok just doing my own thing just now. I have a lot of landscaping work planned at the house this weekend so that should help too. the joys of building a new house on a slope!! Still, I have a mini-excavator booked for the weekend so that should be a bit of fun. Big boys toys! Fingers crossed I won't cut through any of the utilities!! That could be a tad embarassing.

Truth be told mate, I have nearly got my head in the right place again which is why I'm back on here. Nothing is confirmed yet and if it is, I'll deal with it then.

Thank you for your kind words Patsy. At the end of the day, we do what we can to keep going. My blood test came back completely normal today so I'm totally none the wiser as to what's wrong with me. I've got another couple of weeks to go until the doc wants to see me again so I guess I'll just have to wait and see. Chances are I'll just end up going for more tests. The strange thing is, although I'm getting very weird feelings occasionally, it's not affecting my life in any way. Until I get told otherwise I'm just going to treat it as 'one of those things'. Best way to cope I guess.
 
Hello you ... so sorry to hear you've had such a tough week. I was concerned for you as we hadnt seen you around the place for a while xx

try not to be too scared... there are a number of things which can cause the symptoms you have and lots of ways to deal with whatever the outcome is ( my professional head on now ). I know that's far easier said than done though.

as for not hitting your mini goals - life gets in the way at times, and this is one of those times. Just keep doing the things you can do, try not to fall into too deep a hole with any comfort eating , and remember we're all here to offload to

Change the target for that first stone and head for that one instead. This is a long game, not a sprint event. Be kinder to yourself and reset that target. There are times to be hard and to kick yourself up the butt, but this isnt one xx

Right ok, I feel suitably chastised. I will change my signature as soon as I finish this post.

I was annoyed at not making my target last week and my head was not in a good place. That's no excuse for whineging though. I've had a good weekend and am feeling suitably refreshed even though it is Monday.

First success: I went out for a lovely meal on Friday night and managed to optimise throughout.

Second sucess: I've been landscaping my garden all weekend which has involved a lot of shovel work as well as using a mini-excavator I hired (oh so much fun!! :D). I'm now almost ready to lay my new patio and build a retaining wall. Not bad for someone completely useless at DIY!! You Tube is a saviour and is making me in to a proper bloke! I may even ask for tools for my birthday! Lol.

Third success: I forgot to iron my trousers for work this morning and was already running late so I grabbed a pair from my wardrobe I've not been in for a year cos they were too small - they only went and fit!! :D:D:D:D:D:D:D:D:D I didn't even have to breathe in that much! I used to be so in to my clothes and would buy loads of great outfits but haven't been able to wear them in the last couple of years because of my weight. This has given me hope that I'll be wearing it all again soon enough. I just have to hope I'll still be fashionable!

Hmm, I just read back that last success and I'm wondering if I'm not quite there with being a proper bloke yet! Lol. ;) Is it normal to want all my power tools the same make and colour or is that just my OCD?

Fourth success: as I was out working in the garden all weekend (there was even snow!!) I wasn't trying as hard as I could to follow SW. I was just grabbing food in the odd break that I took. It was only later on at night when I sat back and analysed what I'd been eating that I realised I'd been following SW and food optimising without even thinking about it. It's becoming easier to follow all the time. I don't think I've ever found it easier to follow a diet. Yes, I've had my weight gains since I started but I can easily identify where I've gone wrong.

Sorry about the moaning last week folks. I'm back and I'm more determined than ever!! (Now I have to lose some weight or I'll just look silly! Lol)
 
of course you want them the same size and colour! thats like me and my kettlebells.. i have two reebok ones and they then redesigned the handle (each weight was a diff. colour but had the same triangular black handle) and theyve stopped doing that design and changed the handle to round.. so im selling my old ones and replacing so I can have whole set matching :eek:

all my nail products have to be same make, my hairbrushes are all same make.. things have to match!! :D

Don't kick yourself too umch about not reaching targets, sounds like you've had a rough time of it lately and unfortunately life has to come before plan sometimes!!!! Well done for getting back into it and i'm sure you will be osing again before you know it! It may take a while to come off but once its off you'll be disciplined into keeping it off for the rest of your life :)

Ok I've seen it on a few threads and I've tried to work it through in my head but I just can't work out what the acronym NSV means. I just know I'm going to kick myself when I find out but go on - hit me with it. X

Thanks for the kind words. Your kettle bell dilemma sounds completely normal to me. Does that mean it isn't weird at all or that we're both freaks?! I don't have as much experience with nail care products or, unfortunately, hairbrushes. :( X

Well worked on the weekend, you'll have to supply photo's when it's finished.

I suppose that would make a bit more sense. I would have said that fitting in to a smaller pair of trousers was a slimming victory.
