Well I made the scones! I like them!
The recipe I found was... a 107g pack of Smash, 2 eggs and 300g low fat cottage cheese. I actually used a tiny bit more Smash. Blended the cottage cheese and eggs and then sirred in the Smash until it was like a dough. I then just rolled into balls, popped on a baking tray and flattened and baked for about 25 mins at about 190.
I didn't blend the cottage cheese properly - ended up with a few lumps but it really doesn't affect it badly. Tastes like cheese scones - maybe adding some actual cheese would be nice too. I couldn't taste the cottage cheese, only the smash a little bit but with some extra flavouring that could be sorted. I warmed them and had a tiny bit of low fat spread with them. Perfect for lunch! Will be making lots of these!
