Sausage on a mission - veggie green days diary

Hi all,

I'm back after a leave of absence - and mmm a small weight gain.

Now motivated to get going again -

Nice to hear/see some names are still on here.

Just off to do my diary now.

Hi Kitkat :) Welcome back.

The recipe is:

240ml (or one nutella jar lol) of water
8 oz strong wholemeal flour
8 oz strong white flour
2 tbsp extra virgin olive oil
1 tbsp sugar
1 tsp salt
1 sachet yeast

Put eveything in the machine on the "dough" setting. When finished, knead a bit, put into a loaf tin and cover with cling film/tea towel. Leave to rise for about 45 mins. My oven is rubbish and has no temperature markings anymore :( but about 180ish for 25-30 minutes. I use a solicone tin so it just pops out. About 1cm wide is a 57g serving.
 
Monday 18th July

Breakfast:
toast (hexB), Cauldron sausage (0.5 syn),
beans, scrambled egg, mushrooms, ketchup (1 syn)

Lunch:
ss soup
garlic bread -3 krisprolls rubbed with garlic (hexB)

Dinner:
mushroom and lentil loaf (hexA)
coronation coleslaw (1 syn)
pickled beetroot

Snacks:
milk for coffees (hexA)
2 x scran bran carrot cake (3 syns)
pineapple
half an apple

Total syns: 5.5
Fluids: good
Exercise: none

The coronation coleslaw was invented today to try to use up more of my 22p cabbage. I can't be trusted with a jar of mayo :rolleyes: so it had to be mayo free. Though I say so myself, it is quite edible!

1/4 small white cabbage
1 large carrot
1/4 red onion
1/2 apple
few grapes

for the dressing:
small tub of 0% Greek yoghurt
1 tbsp mango chutney (2 syns)
1/4 tsp curry powder
zest of half a lime

Makes 2 huge servings at one syn each.

Oooh btw I found harissa paste! I'm spreading it on chicken tonight but nice to see you can make it into a dip as well. I wondered about cous cous too so I will prob do that this week at some point. Tonight Im having this harissa chicken with spicy hummous, sweet potato wedges and salad. Doing an Ermintrude week lol. Can't wait! xx

Hiya Cjeb - I think green days have the best healthy extras and don't understand why anyone would choose to do anything else hehe. You are doing really well with your loss :clap:

Beegee - mayo falls into the pringles/nutella/devil food category. Glad I found a way around it with the new coleslaw.

Breakfast:
cheese beano (hexB for toast, 2 syns for plastic cheese)
Cauldron sausage (0.5 syn)

Lunch:
ss soup
fruit salad (strawberries, blueberries, banana, grapes)

Dinner:
mushroom and lentil loaf (hexA)
coronation coleslaw (1 syn)
pickled beetroot

Snacks:
milk for coffees (hexA)
scran bran carrot cake (1.5 syns)
4 x ryvita topped with cottage cheese, 2 tsp plum jam, 2 walnut halves (hexB + 4 syns)
rhubarb stick dipped in 1 tsp sugar (1 syn)

Total syns: 10
Fluids: good
Exercise: none

Here's a recipe for chickpea dahl loaf that everyone is raving about in our group.

tin of chickpea dahl - you can find this in Morrisons or Asda
2/3 eggs
a packet of batchelors curry rice

make up the rice, lob in the other ingredients, give it a swizzle till its mixed, shove it in a loaf tin, bung it in the oven at about 200c for about 20-25 mins, until its well, cooked

Hello sausage - your diary looks yum as always. I keep meaning to make the chickpea loaf above and as aI actually have some tins in the cupbord maybe today will be the day. I have to say green days are my favourite. You have also made me add cauldren sausages to my shopping list. I used to eat them when I was veggie and I'd like to try them again.

Batchelors mild curry rice is free!! as are the others. That loaf sounds nice. I wonder if they do a chickpea dahl in tescos? Is it free then?

I have eaten up all the hummous so will need to make more. It is soo good. x

Hi Lucy, I dont know if Tescos do a version, or whether its free, the ones in asda and morrisons are definatly free though :D.
 
Wednesday 20th July

Breakfast:
porridge and milk (hexB + hexA)
topped with banana, strawberries, grapes

Lunch:
ss soup
cheese on toast (1/3 hexA + hexB)

Dinner:
Quorn balls in passata with mushrooms, sweetcorn, oxo spag bol, brown pasta, salad leaves, onion leaves, balsamic vinegar, cheese (2/3 hexA)

Snacks:
strawberries,
scan bran carrot cake (1.5 syns),
M&S lentil curls (4.5 syns)

Total syns: 6
Fluids: good
Exercise: swimming!
