Yummy dinner and I have leftovers for tomorrow :)

Stuffed pepper.
Method - fry beef mince and bacon lardons. Add 2 cloves chopped garlic, chilli flakes, italian herbs, half a small onion (chopped very finely) and 2-3 mushrooms chopped very finely and then half tin chopped tomatoes. When cool, stir in some feta cheese (don't worry - makes enough for five or six peppers!). Finally sprinkle with cheddar and put in baking tray with a couple of tablespoons of water and bake in the oven (200'C) for 20 mins. Serve with small salad (I made a little ring around my pepper).

This gets 10/10 and I can't wait to have it again tomorrow! :-D
 
Hi Slaj, I'm sure it would work with quorn mince. Just make sure it's moist. Mix in plenty of cubed feta and top with cheddar :)
 
Add a bowl of lime frog spawn (!) with a
Handful of raspberries and a coffee with cream to today's diary.

Thank you!!! The photo had a nice shadow of me across it - ha ha! Seriously, the peppers are lush and one pack of mince makes enough for about five so it's an easy lunch/dinner for the next two days.
 
Ok so food today will be:

B - coffee with cream x 2

L - egg fu yung (as per Monday but with prawns and chilli added)

D - stuffed pepper with small salad (as yesterday)

Will update with what extras I have later.

Decided to have the stuffed pepper lunch time instead - just couldn't wait! It was quite a big one so only ate just over half of the pepper and didn't have a side salad.
I would estimate max 6g. Then had lime moussy thing with small amount raspberries so add another 4g. Just having a black earl grey tea and will then go out and pot some plants - beautiful sunny day here in Swissycheeseland. :-D
 
Add half an avocado with prawns and oil/vinegar and egg fu yung to yesterdays food.

I cooked the fu yung slightly differently and preferred it. Basically beat eggs, added raw sliced mushrooms, cooked prawns, bean sprouts, red chilli, garlic and then heated a large frying pan. Added enough oil to coat pan and a dash more. Then poured mixture in (so it was about the thickness of an omelette. Too big to flip in one so broke in to four and turned and cook for another couple of minutes on the other side. Serve with soya sauce. Yummy and very low carb and high protein :-D. And super fast food!
 
Just got back from a 7km walk. Beautiful sunny day here again. Am off for a bath and then will have a bacon, feta and avocado salad for lunch - will post a pic later x

Egg Foo Yung
Recipe
3 eggs (1.5g)
1 large spring onion chopped (including green part), 1 garlic clove, handful of sliced mushrooms, chilli flakes. (3g max)

Beat eggs and then mix in ingredients above. Heat frying pan with peanut oil until very hot. Poor in mixture and cook for a couple of minutes and then turn flip and cook for a couple of minutes. Serve with soya sauce.

This was really nice but I'd add prawns next time.

Snacks - marmite cheddar bite (0.2g) slice of ham with dash of mustard.

That all looks fab will be stealing the egg foo yung recipe and stocking up on marmite cheddar bites guess who's joining you on Atkins

Lunch was bacon, avocado, egg and feta salad. Added jalapeños and mayo after pic.

Dinner was 2 x cheeseburger royals from mcd's - ditched bread of course and scraped off ketchup so just carbs for the onion and pickles - say 5g. Yum! Was very hungry after German class and then kids swimming lesson.

May have small snack when hubby gets home later if hungry.
