Silvermanes food diary - Extra easy plan

Well managing ok so far, although I think I overdid it on the fruit a tad ROFL

The only thing I am struggling with is my cups of tea, I just cant stand sweetners in it, dont mind them in coffee, but tea is rank *yuk* So I am having 3 cups of tea a day instead of my usual 'many cups' lol The rest I am having is coffee, which I can tolerate the sweetners.

Did homemade breadcrumbed chicken yesterday will post piccys laters.

Doing well so far. Managed to resist temptation so far. Had a planned flexi day today. Knew I was going to have a rough day so planned a few low syn treats. Had a pk ww tortillas and a galaxy bubbles bar. Piece of cake at my mums. I felt so naughty but I didnt go beyond my plan. So happy about that.

I will do a bit more on my week and what I have been up to soon.

Hi girls (and boys)

I have been awful!

My illness has been getting worse, and I hit rock bottom with depression and have eaten my way through the last few months to the point I have gained all my weight and added some on for good measure.

I dont know how to stop. I keep wanting to, but I am an emotional eater and I still feel emotionally beaten up and I dont know how to get into the right mindset.

I keep swelling up with water at the moment, last month I gained 10Ib's of water. I get rid of it and then it starts again. The doctors are trying to work out whats going on.

I got bitten by a Swedish tick and ended up being treated for Lymes disease. My OH's transition to FTM has been a very hard journey on me emotionally and the NHS waiting times for treatment have been horrendous. We just had to change gender clinics because the London one was terrible and we ended up complaining. His body dysmorphia is really bad, and we arent being sexually intimate and it affecting me a lot. I know he cant help it, but I am finding I am internalising it all. He is a wonderful man, and so loving, but this one thing has knocked me more than I thought it ever could. We talk about it though and were working through it.

I had to give up my pony Dylan, cos I just couldn't ride anymore because of my illness and weight gain. I still have Spirit my yearling but I am struggling to keep going with him. If I had to sell him I would be heart broken.

I havent been this big since 2005. I just dont know how to sort my head out. At the moment I feel like if I try to lose weight I am setting myself up for a big fail.

I just cant exercise enough to keep the weight loss consistent and then I lose faith.

Am not asking for answers just need to get my thoughts out there, even if thats all I do.

Well done for posting your thoughts babe, it takes a lot of courage. Step 1 is coming on here, you have done that so somewhere in your mind you are ready to get back on the SW track.

I didnt exercise for the first year and half of my journey, I lost over 2 stone without it so my recommendation would be get the food on track and worry about the exercise later.

It sounds like your life has gone a bit crazy atm!! I hope all are feeling better from illnesses and such.

I too am an emotional eater and it is sooo hard to tell yourself no when ur upset. Whilst your mind isnt quite there i would recommend changing the little things, one thing a day, you'll be amazed how quickly they build up!! xx
 
I am struggling to get my head in the right place, but I have started to make some better choices. Am having more blood tests. See what's going on, and why I keep swelling up so much. My chest isn't great either. The season changes are making it play up.

I will get there. Just so much going on and that certainly doesn't help.

Stroganoff - Serve 4 - Extra Easy.

Ingredients:

1 Onion diced (free)
1 small punnet of chestnut mushrooms 1/4rd (free)
3 gloves of garlic Crushed (free), Salt and pepper.
500g reduced fat beef steak (you can buy ready sliced but I make the slices smaller)
300ml Beef Stock (free)
200g Extra Light Plain Philadelphia (12 1/2 syns)
65g Red wine. (I buy from sainsburys £1 for small bottle) - (2 1/2 syns)
Buttery Frylite (free)
Worcestershire sauce.

To be served with Rice and a 1/3rd Superfree Vegetables.

Total Syns 15 - rounded up to make it easier 4 syns per portion.

Fry onion, garlic and Mushrooms in buttery frylite
Add Beef until browned. Splash of worcestershire sauce and season.
Then add Stock and wine, and cook till slightly reduced.
Add philadelphia and stir through until melted, then cook until thickens.

Serve with your rice and superfree veg! Very rich and creamy :)

I sometimes use more meat, it depends on if its on offer lol.

2 x weetabix HEB with skimmed milk HEA and 1 tsp sugar (1 syn)

Lunch

Vegetable omelette with 1/2 tin baked beans
Apple

Dinner

Stroganoff as above with rice (4 syns)
Apple

Drinks

2 x cups of tea (ran out of sweeteners) 4 sync
3 x cups of tea with sweeteners

I am aware I am probably not drinking enough, so I need to address that.

Extra Easy syns = 9 syns.

Hi Pesty, Just taking day by day, got lots of support, so hopefully this will help me keep on track as I have a lot to lose! I gained what I lost and an extra 14Ib's Eeeeek!

I know what the problem is though, so I just have to try and deal with it as best as I can. Plus my OH has to lose weight for his chest surgery this year, and so I can be strict with him because he has no choice, and this means he won't be helping me sabotage myself!

My mum gave me a load of recipe books and I have the new Jamie Oliver magazine where he has his list recipes of the year, so gonna backwards SW engineer some of them, and I hope this will help me choose wisely, because I will be eating food I enjoy.

I have a Moroccan dish I will be sharing soon as well ;)
 
Honey and Mustard Chicken with Springer Mash

Honey and Mustard Chicken Served with Springer Mash and Veggies.

This is a recipe we used to do from a jar, that the kids loved but was really high in syns, so this is my SW version, which the kids think is
better. :)

Serves 4 - Extra Easy

Ingredients - Honey Mustard Chicken.

800g (approx) Boneless chicken thighs, all fat/skin removed and chopped. (free)
1 onion Diced
1/3 bag frozen sliced peppers - I buy them because otherwise I am stood there all night chopping stuff lol. (free)
8 Chestnut Mushrooms sliced (free)
3 cloves garlic crushed, Salt and Pepper. (free)
300 ml Chicken Stock (free)
3 tbsp Honey (7 1/2 syns)
2 tbsp wholegrain mustard ( 3 syns)
1 tbsp Lemon juice (free)
2 tbsp Balsamic vinegar. (free)

Using Frylite, cook onions, mushrooms and peppers, with the garlic.
Then brown off the chicken until all browned off.
Then mix the honey, mustard, stock, lemon juice, and balsamic vinegar together. I do this because the honey melts from the heat of the stock,
making sure you get the right measurement of honey.
Then pour all over the chicken and let simmer while your potatoes are cooking, so that it will reduce a little.

Ingredients - Springer Mash (free)

1kg potatoes - skinned, diced, cooked and mashed.
4 Spring Onions finely diced
150ml Vegetable stock
Salt and Pepper to taste.

Put spring onions on top of potatoes BEFORE you mash them, as adds the flavour into the mash if you mash the spring onions with the potatoes and
add the stock, as you mash. Pour some of your juices from your chicken onto the mash!

Serve with 1/3rd super free vegetables of your choice.

Total syns 10 1/2 - Rounded up to 3 syns a person.
