Tuesday 24th Jan 2012 - Extra Easy

Breakfast

2 weetabix with granulated sweetener and skimmed milk

Lunch

SW cooked English with Sainsburys GFY sausages 1/2 syns each (1 syn), eggs, mushrooms, beans, back bacon all fat removed.

Dinner
Bean and veggie, beef stew (slow cooker)

I made the stew really simple, slow cooker so I chucked it all in!

Sainsburys fresh bean and vegetable casserole mix
Baby new potatoes
West country braising beef (normally very expensive but was on offer)
Maggi liquid seasoning
1 pint Beef stock
1 tsp Marmite.
worcestershire sauce
Salt and pepper, thyme and parsley.


Snacks

Fruit.

Drinks

2 cans SF Redbull, 3 teas with sweeteners, night time tea with 2 tsp honey (2 syns)

HEA = Skimmed milk
HEB = Weetabix.

Syns = 2 1/2

Thursday 26th Jan 2012 - Extra Easy

Breakfast

2 Weetabix with granulated sweetener, and skimmed milk.

Lunch

Carvery : Gammon, all fat cut off, Cabbage, Carrots, Peas, 3 small roast Potatoes (7 1/2 syns) Very small drizzle of gravy approx 4 tbsp (3 syns)
Diet coke.

Dinner

Tuna salad, with eggs and savoury rice (syn free)

Snacks

Fruit.

Drinks

2 cups of tea, one with 1 sugar and the other with 2 (3 syns) splash whole milk (1 syn). Diet coke and sugar free fizzy fruit drink.

HEA = Skimmed milk
HEB = Weetabix.

Syns = 14 1/2

Breakfast

2 Weetabix with granulated sweetener, and skimmed milk.

Lunch

1/2 light choices Tuna Sandwich with fruit (5 1/2 syns)

Dinner

Fanta 'Sweet n Sour' Chicken - Serves 4 - EE

How I made it: - Seems to be a few different ways, so I took that all on board and did it like this:

1 onion chopped
1/2 pack french beans chopped.
3 cloves garlic crushed, Salt and Pepper.
Sliced peppers.
Diced chicken.
Generous splash worcestershire sauce.
Splash Maggu liquid seasoning.
3 tbsps Red wine vinegar.
1/2 Carton passata.
1 Can Sugar Free Orange soda (Fanta or whatever)
Small snack pack of fresh pineapple chunks, which I sliced and made smaller.

Frylite fried onions and vegetables and garlic.
Browned off chicken, add seasoning.
Added worcestershire sauce, Maggi, vinegar and passata, Can orange.

Then cooked on a fairly high heat for approx 1/2 an hour, basically reducing the sauce by at least half. Then when cooked, and ready to serve on the rice. Took off the heat and stirred through the pineapple chunks, and served immediately.


Snacks

Fruit. 3 x Pink and Whites (7 1/2 syns). Muller light.
Tescos lighter choice date and walnut slice (3 1/2 syns)

Drinks

3 Cups of tea with sweetener. 2 herbal teas with sweeteners. SF red bull.

HEA = Skimmed milk
HEB = Weetabix.

Syns = 16 1/2 (went over because I forgot about the slice!)

OMG MICROWAVED PINK AND WHITES!!!!!!

2 Weetabix with granulated sweetener, and skimmed milk.

Dinner

Spaghetti Bolognaise made with wine (65ml) and tons of super free veg (1 syn for the wine). Bolognaise sauce was made the same way I did the bolognaise bake.

Raspberry Icecream Made for Two: 200g pureed frozen raspberrys (2 syns) 100g fromage fraise (free) 3 dsp sweetener granules.

Whizz it in your food processor, and voila and lovely and fruity ice-cream! (see piccie)

Works out 1 syn per person!


Snacks

Fruit. 2 x pink and white (5 syns)

Drinks

3 Cups of tea with sweetener. 2 herbal teas with sweeteners. SF red bull.

HEA = Skimmed milk
HEB = Weetabix.

Syns = 7

Homemade burgers (syns free) in a kings mill roll (HEB) with low low sliced cheese (HEA) Mixed beetroot salad (free) Mini corn on the cob (free) 1/3rd pack batchelors rice (7 syns)

Fruit.

Drinks

3 Cups of tea with sweetener. 1 herbal teas with sweeteners. SF cordial (weight watchers).

HEA 1 = Skimmed milk
HEB 1 = Weetabix.
HEA 2 = Low Low sliced cheese.
HEA 2 = Kingsmill Wholemeal 56g roll

Syns = 7

Monday 30th Jan 2012 - Extra Easy

Breakfast

2 Weetabix with granulated sweetener, and skimmed milk.

Lunch

Was out most of the day and only managed a muller light and packet of pomme bear crisps (5 syns)

Dinner

Syn free Chilli Co Carne (with lots of super free veg) and served with rice.


Snacks

Fruit. 4 x Pink and Whites (10 syns). - had a real sweet tooth tonight and these microwaved are awesome!

Drinks

3 Cups of tea with sweetener. 1 cup of coffee with sweetener.

HEA = Skimmed milk
HEB = Weetabix.

Syns = 15 syns.

I have had a really lapse day, where I was really busy, made brekkie for the OH and then totally forgot to eat myself.

Lunch

Again the same...really bad I know, I did have an apple and a banana, but was just mentally busy today.

Dinner

Thai Green curry with lots of super free veggies and Rice (3 1/2 syns for Philadelphia in recipe)

Snacks

Fruit. Lots of fruit! Mango, Pineapple, Gala Melon. 1/2 pack Mikado's (7 1/2 syns)

Drinks

1 Cup of tea with sweetener. Redbull Sugar free. - wow I didn't realise I had drank so little.

HEA = Skimmed milk
HEB = Oops

Syns = 11 syns.

Oh dear, didn't have a HEB and didn't really drink anything today, a bad day with making sure I had eaten and drank properly, that needs to be rectified! Just been mega busy but really need to make sure I take time out for me!!
 
Hi Nicky!

Just popped in to say hi as not on as much of late. Keep on fighting kid, and my latest discovery, well, not exactly a discovery, more of a trial is drinking lots of hot water (allowing it to cool).

It really helps with digestion and metabolism etc. I've reduced the amount of coffee (black) and sweeteners and I think it helps.

Wednesday 1st February 2012 - Extra Easy

Breakfast

2 weetabix and skimmed milk with sweeteners.

Lunch

Again the same...no lunch, I went from mums, to full shop, from full shop to feed horses, from feed horses to cook tea....manic day.

Dinner

Chicken Basquaise EE Serves 4 - 1 1/2 syns pp

1 Lrg Red Onion Dice
3 Cloves Garlic finley chopped
1/2 bag Sliced frozen peppers (or slice 3 peppers, one of each colour)
800g (usually about 2 pks) Boneless Chicken Thighs (all fat removed)
28 sprays pf PB Virgin Olive oil spray (1/2 syns per person) - or olive frylite
50ml White wine (1 syns per person)
2 tins chopped tomatoes
Paprika
Thyme
Parsley
5 Bay Leaves
Salt and Pepper.
1 lemon worth of juice (or 50ml of lemon juice out of the bottle)
300ml Chicken Stock.

Cut any traces of fat off the thighs, then sprinkle and rub paprika into each thigh.
Heat the oil in the pan, add the thighs and cook on both sides until golden brown, then remove from the pan and put to one side.
Add the onion and garlic and cook for approx 5 minutes until tender, then add the Peppers, and again cook until tender. Then add the wine, and cook until the wine is reduced.
Then add the tomatoes, and the Bay Leaves, Thyme, salt and pepper, and then return the chicken to the pan, adding the stock, stir in well, and cook on a medium heat until the sauce reduces down approx 30-45 Minutes.
Just before serving stir through the Lemon Juice and add the parsley.

I served with Carrots and Savoy Cabbage and Mini roasties.

1 1/2 syns per person.

Drinks

1 Cup of tea with 2 sugars (2 syns) 2 cups of tea with sweeteners, 1 can sf dandelion and burdock.
HEA = Skimmed milk

Am still struggling with having a lunch, I have just been so busy lately, that am often doing things at lunchtime, and then it gets forgotten until my tummy rumbles and then i'll eat some fruit. Not ideal, I know.

2 x frylite 'fried' eggs, 2 BGTY sausages (1 syn) Mushrooms, 2 x rashers, Back bacon, all fat removed.

Dinner

SW Spag Bol with pasta and lots of super free veggies. (1 syns for red wine in my sauce)

Snacks

Fruit. Pineapple, Pomme bears (5 syns)

Drinks

4 Cup of tea with sweetener. 1 cup of coffee with sweetener, Diet dandelion and Burdock.

HEA = Skimmed milk
HEB = Weetabix.

Syns = 9 1/2 syns.

Better day food wise, ate much better today.

SW Stroganoff and tagliatelle (4 syns)

4 Cup of tea with sweetener. Diet dandelion and Burdock.

Sunday 6th February 2012 - Extra Easy

Breakfast

2 weetabix and skimmed milk with sweeteners.

Lunch

2 x frylite eggs with bacon (all fat removed) and sliced potatoes (fried in frylite)

Dinner

Moroccan Chicken, a mildy spicey dish. Serves 4 - EE - 2 syns.

800g Chicken thighs, all fat removed and cut in half.
1 leg red onion diced
3 cloves garlic crushed
Cinnamon stick
30 ml lemon juice
90g prunes (7 1/2 syn total) - diced
3 tbsp's (split it in to half) Ras El Hanout spice - make sure the one you buy has rose buds and lavender, as it has the best flavours in it. This is a beautiful spice! Smells AMAZING!
250ml chicken stock

Put the chicken into a bowl and put half the spices into it and mix it with your hands to give all the chicken a good coating.

Using frylite, brown off all the chicken, and then return to the bowl.

Add the Onion and cinnamon stick to the pan and 'fry' with frylite until onion is tender, and then add the garlic, and return the chicken to the pan, add the lemon juice, give it a good stir, and cover the pan with a lid and cook for 5 minutes.

Add the left over spices, chicken stock and prunes, and cook for a further 20 minutes, with the lid uncovered, so that the sauce reduces.

I served on a bed of rice with a third Superfree Veg.

2 syns pp

Snacks

Fruit. Pomme Bears (5 syns) 2 x pink and whites (5 syns) ww fruit biscuit thingy (4 1/2 syns)

Drinks

3 cups of tea with sweeteners 1 can sf dandelion and burdock.
