Silvermanes food diary - Extra easy plan

Friday 17th Feb 2012 Food Diary:

Breakfast: 2 weetabix HEB with skimmed milk HEA

Lunch: None

Dinner: Beef Rogan Josh - syns free - this one is great for the slow cooker.

I am quite a big mild/medium curry fan, so usually have all these spices in stock all the time.

800g Stewing steak, all fat removed, diced.
1 Cal spray oil.
4/5 carrots diced roughly.
3 Garlic Cloves crushed/finely diced.
1 tin of chopped tomatoes.
4 tbsp's tomatoe puree
300ml Beef stock (if using a slow cooker just add the stock cube not the water, as the slow cooker adds the water for you).
Fresh ginger (or frozen) approx 1cm, finely grated.
1 tsp Cumin
1 tsp Ground Coriander
1 tbsp of Mild or Medium Curry powder. I used mild cos the kids don't like it too spicy.
1 Cinnamon Stick
2 Cloves
3 cardamon pods lightly crushed - to do this sit one under a flat knife edge and then crush with my hand.
Salt and pepper (I use fresh ground pepper)
200g Green Beans - diced.

Served with basmati rice.

Spray a pan with oil and brown off the beef, add the carrots and the beans and cook for a few minutes, adding all the herbs/spices. The smell is amazing! Cook for a few minutes, which will release all the spices. Add the stock and bring to simmer, then add the tomatoes and puree. Bring to the boil, and then reduce the heat, and add a lid, and simmer for 1 1/2 hours - 2 hours.

Remember if you do this in the slow cooker, add the stock cube but not the water, as the cooker will add water, otherwise your curry will swim in water!

Serve with Basmati Rice.

Snacks: Lots of Fruit, 1 pack of Pomme bear crisps 5 syns 1/2 pk Mikado 8 syns

Drinks: S/F red bulls, S/F cream soda, Herbal Tea with sweeteners, Tea with Milk from HEA and sweeteners.

Total Syns: 13 syns

Monday 20th Feb 2012 Food Diary:

Breakfast:

Lunch: 1/2 chicken an bacon Sandwich (HEB)

Dinner:

Homemade Fish and Chips with homemade Posh Mushy Peas - 2 1/2 syns. Serves 4 - EE

You can use any fish for this.

For the breadcrumbs, grate a whole lemons worth of lemon rind.
15g Flour
1 egg whisked
2 pieces of w/m 400g loaf (like warburtons or hovis)

Whizz the bread in a food processor, or rub bread over a grater to make into breadcrumbs, and rub the grated lemon rind into the breadcrumbs and lay out on a plate.

Lay the egg on a different plate and do the same for the flour.

Rub the fish on the flour, tap off the excess, and then cover in the egg, and then rub into the breadcrumbs, and place on a baking tray. Sprinkle with salt and pepper (I use freshly ground).

Bake in the oven 180C for approx 20 Minutes until golden brown.

Make SW chips! I made them with Sweet Potatoes.

For the posh mushy pea's Cook the peas for approx 4 minutes. mash them roughly, and add the juice from the lemon, 1 tsp mint sauce (syns negliable), salt and pepper, and 150g FF Fromage Fraise or FF yoghurt. Mix it all together and cook on a very low heat.

Snacks:Fruit. Cup of tea with Sugar (2 syns)

Drinks: SF Redbull, Herbal Tea with sweeteners, Tea with MIlk from HEA and sweeteners. 2 x Mallow Wafers (5 syns) Pomme Bear (5 syns)

Breakfast: Eggs and bacon (not very original I know, but I felt a bit dodgy and so ate what I fancied).

Lunch: Lots of fruit (felt a bit sick cos of *week)

Dinner:

Tikka Masala mild curry - can be easily converted to be veggie with Quorn chicken style chunks.

Traditionally a lot of masala have real cream in them (or yoghurts), which we cant use for obvious reasons, so in this instance I have used VLF fromage Fraise, although you can buy a weight watchers cream if you really wanted to!

Serves 4

Ingredients - 1 syn per person

  • 4 level tbsp's of Pataks Tikka paste (it MUST be paste, not a jar, the paste is literally just the spices) 1 syn per level tbsp.
  • 1 onion chopped
  • 1 diced red pepper (or frozen sliced peppers)
  • pack diced baby corn
  • pack diced mangetout (you can usully buy them as one pack with both in, green beans work as well)
  • Carton passata
  • 2 heaped dsp's VLF fromage fraise.
  • Frylite
  • 2 Garlic cloves crushed

I often add finely diced tomatoes as well, as I love the fresh taste they give to the dish and I love that Sainsburys do these in the frozen veg aisle.

Rice to serve.

This is such a simple recipe to do, basically frylite a pan and 'fry' the vegetables until they start to soften, you can add a little water to make this process easier.

Once a little softened, add the paste, using a tbsp measuring spoon (make sure your level not heaped), then fry in the vegetable's. This releases all the spices! Then add your chicken, mix well until all the chicken is well covered, and begins to cook.

When the chicken starts to all look evenly cooked on the outside you can add you passatta and then the fromage fraise, mixing well. leave to simmer while your rice is cooking. Don't boil!

NB: The paste jar says to marinate the chicken overnight etc etc, but tbh you dont need to do that, it tastes just as yummy.

I serve mine with 2 dollops of fromage fraise and paprika sprinkled on top, but this is purely a personal choice, you don't have to do that.

Voila a nommy low syn curry!

In my house the kids will only eat mild to the milder side of medium. They love Tikka as its quite creamy the way I do it, and not too spicy. My Beef Rogan Josh is quite mild as well as I stick to mild curry powders to satisfy the sprogs, but still get the lovely flavours. If you like mild spice you'll like the Moroccan dish I did as well :)

yeah I prefer my curries mild to medium, he doesn't really trust me with spices anymore, I went to make paprika chicken and used cayenne instead of paprika. you can imagine that didn't go down to well! haha!
