Theres nothing like home made pizza, and its not that difficult to make. only takes 5 minutes to mix up and batter, leave for an hour or two, then another couple of minutes to roll out. The rest is just ingredient prep and actually cooking the thing.

Morning all. For once I'm not working overtime today, so I've got the day to do my own thing. Quite glad about that, as after ten weeks of constant overtime I think I've earned a day off!
Making pizza tonight. May or may not post pictures of it when I'm done (depends how lazy I'm feeling later lol). Thanks for the tips and encouragement Han. Really do appreciate it. I've got very lazy with my cooking, and it's nice to have something really enjoyable to get motivated over making. :) I'm hoping that 40g of mozarella will be enough, as I don't want it to be too points heavy...although looking I do have a few points to spare today, so shall see how that goes.
No idea for lunch though...will probably see what ASDA has when I go to buy the stuff.

lol. Aye, that's points free apparantly...so forgot to add it to the list. :p Expect I'll be editing it all day as I think of new things to add to the topping. Will definately be adding onion now as well, and might shove on a bit of sweetcorn. :p Might also "borrow" a little of the chicken that's in the fridge...lolol

Aye, my breakfast was a bit rubbish...was being rushed to get out the house to do some shopping. At least that's my excuse, and I'm sticking to it! :p

Ended up buying ASDA's lighter mozarella, so shall see how much I use. Otherwise I've got a recipe somewhere for a aubergine & mozarella bake. If there's some left over, I might make that for tomorrow. :)

Well that was great fun beating hell out of the pizza dough. I made it a bit too wet though, so had to add more flour...so it's using up more points than I was hoping (ending up using 17pp on the flour!), but still. Looks like it will be a nice one even using a whopping 30pp for the recipe.
 
Well that was delicious! The best part was the base, which had so much flavour...really blows buying a pizza out of the water. Very nom, and completely worth the points it cost...as well as being delicious, it was filling. I am well and truly stuffed. As promised, a picture of my lovely pizza. :)

Oh definately. Learnt a lot from making it this time, such as that I do with using more cheese & less topping. The topping had difficulty staying on, so think I overloaded it a bit. :p
Going to make a spicy one next time. Got a jar full of home-made pickled jalapenos (I had a chilli plant a couple of years ago, and it went mental...ended up with about 4 ton of chillis in a matter of weeks, so pickled them as there was no way I'd use them up), so that'd make for a nice topping I think.
 
Cooking is a learning process for sure! Jalapeños are too strong for me! But that's good that you could pickle your own and you got plenty of use out of the plant!
 
I love jalapenos... and I belong to the school of thought that says if the topping doesn't fall off your pizza, then there isn't enough topping on there to start with!
 
I love spicy...my curries aren't so much food as they are chemical warfare! Only ever been defeated once, and that was with a phall from the takeaway. God, that was hot! Was sure at the time that it disolved my lips. :p

Looking forward to work on Wednesday oddly. Not so much the work, but moreso that I went clothes shopping on Saturday and bought some lovely new work trousers. Was a thrill to go into Matalan and be able to buy off the peg...never been able to do that before!
