.. SLOW COOKER RECIPES ..

Not sure if I have posted this before, I love it!


8oz skinless, boneless chicken breasts, cut into strips
1 cup brown rice, uncooked
1 large onion, thinly sliced
4 garlic cloves, minced
2 jalapenos, seeded and diced
1 28oz can diced tomatoes
1/2 cup plain, non-fat Greek yogurt
1 tbsp freshly grated ginger
1 tbsp Garam Masala
1 tbsp cumin
1 tsp paprika
1 tsp allspice
1 tsp salt
1/2 tsp black pepper
1/4 cup cilantro, finely chopped
Juice from 1 lime
Instructions

In a large bowl, mix all ingredients except chicken, rice and cilantro. Stir well to combine.
Lightly mist crock pot with non-fat cooking spray, and place chicken inside. Season with additional salt and pepper.
Pour bowl of tomato mixture over top of chicken. Cook on low for about 6-8 hours or high for about 4 hours.
Prepare rice according to package instructions.
Serve over rice or pasta and top with fresh cilantro.

Spicy Veggie soup (very customisable)

200g red lentils
2 potatoes, cubed
4 carrots sliced
1 onion
tin of sweetcorn
1 tsp cumin seeds
1 tsp ginger
1 tsp chilli powder
vegetable stock - 1litre

Chop up the onion finely, throw into a frying pan with tsp olive oil add the cumin, ginger and chilli powder. then throw into the slow cooker with the lentils, vegetable stock, potatoes, sweetcorn and carrots .............. leave for 6-8hours then blend .......

Hi Claire,I'm new to site and found your recipes today and made your spicy vegetable soup in a vintage prestige slow cooker that I purchase and had tested. It has auto on the dial and I am learning to use it ,as it has no instruction booklet. It cooked in 4 hours on auto ; perfect.Wow the soup is amazing and my husband loved it as well.It made my lips tingle for 10 minutes but just right for husband.I used 2 small dried chillies that I blended and I didn't sauté the spices or use sweet corn but did the rest as you suggested. Oh and I added I tsp of garam masala powder.Definately will be making regularly.Thank again .
