Give it a try it is sooooooo good. I love risotto and this one and mushroom is my favourite. And depending on how you make it (leaving out the wine, but you wouldn't approve of that corky lol) it can be completely free!

I've never, ever made a risotto. Never! lol I'm having a green day tomorrow, so can I have the recipie pretty please? :D

Oh I've just had BNS chips with my chicken :D I chucked a red onion, a white onion and some mushrooms in too! lol It was absolutely deeeeeeeelicious :D
 
Ok, so this is how I do BNS risotto. Its not an official recipe its what I just chuck in. Im not totally sure of the quantities of rice, I just chuck in what I think will be enough for how many portions I am doing.

BNS cut into cubes about 1cm square
Fresh sage (dried is fine, but use less)
1 onion
Garlic (not too much)
Fry light
1 glass of white wine (or I use a small glass of sherry if I dont have any wine) or leave it out if wanting to save syns
Arborrio or risotto rice
1L of Vegetable stock, or chicken if you prefer (its usually enough for 2 portions)
Salt and pepper

Spray the BNS with fry light, sprinkle with sage and roast in the oven until soft, usually about 20 mins.
Cook the onion in fry light until soft and then add the garlic and cook for a minute or 2 more. Add the rice and mix in with the onions and garlic.
Add the wine at this point if using and cook until the alcohol has gone :)eek: sorry Corky) and has been absorbed by the rice.
Add 1 ladle of the hot stock, along with half of the roasted BNS. Keep stirring until the stock has been absorbed. Keep adding a ladle of stock at a time and cook until absorbed before adding the next one. Keep stirring!
When the rice is tender, add the rest of the BNS and sage and seasoning to taste (not too much salt as the stock is usually salty).
Serve immediately, sprinkled with a little parmesan if required and enjoy.

Contrary to popular opinion I think risotto will keep in the fridge, but does go a little stodgy, but I dont mind this. I dont think it freezes very well though.

I popped to Asda for some risotto rice while I was waiting for the recipie. I only wanted rice but I managed to spend £30! LOL I've got everything else in........except the wine, but I may leave that out this time :( :8855:

I shall return with my verdict tomorrow ;) lol
 
Sounds lovely, might give that a go this weekend too. I've never ever made or eaten risotto either! The wine is definitely selling it to me :D
 
I'm feeling very positive! Had two really angelic days since WI Wednesday - low syns mainly cause i just haven't felt like I needed them - and still 5 whole days to stay angelic and lose again - feeling highly motivated at the mo - think were all doing really well and shall all be celebrating our 4 stone for Christmas loss!

Risotto is gorgeous I have had it once this week already, I leave out the wine too ;) lol

I'm reporting in with a 2lb loss :)

I want a decent loss next week too, to finally get me into a new stone :) I've made sooooo little progress this month so far! lol
